Ingredients
  • 12 pounds turkey
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup onions, sliced
  • 1/4 cup celery, cut into large sections
  • 1 apple (large) - cored and cut into sections
  • 3 cloves garlic thinly sliced
Directions
  • Preheat the oven to 325 degrees. Remove neck and giblets from the cavity of the turkey. Rinse the turkey inside and out with cold water. Pat dry with a paper towel.
  • Sprinkle turkey inside and out with salt and pepper. Tuck wings under turkey. Oil the turkey with olive oil and salt and pepper.
  • Place turkey in an oven roasting bag. Scatter onions, celery, apple sections and garlic over and around turkey.
  • Add 1/2 C of water to the bag. Tie the top of the bag and make a slit in the center of the bag and place into a roasting pan breast side up.
  • Roast turkey 3 to 3 1/2 hours, or until a meat thermometer inserted in the thickest part of the leg (but not touching the bone) reaches 165° F. to 170° F.
  • Carefully tear open and remove the bag. Increase the oven temperature to 450° F. Roast 30 minutes longer, or until the thermometer registers 180° F., basting with the pan juices every 5 minutes. Turkey should be golden brown.
  • Remove the roasting pan from the oven and carefully transfer turkey to a platter, letting the juices run back into the pan; reserve the juices for gravy. Cover the bird with foil and let stand for 20 minutes before carving.

Simple Mashed Potatoes Recipe

  • 5 pounds potatoes
  • 1 teaspoon Salt
  • 1 cup half and half, warmed
  • 1/2 cup butter
Directions
  • Peel and slice potatoes; cut into cubes. Put potatoes in saucepan, and pour in enough water to barely cover them. Bring to a boil, and turn heat down to medium. When potatoes are tender, drain well and put them back into the saucepan.
  • Add the butter and warm half and half. Mix with potato masher or electric mixer until smooth and creamy. Salt to taste.
Note:Milk could be substituted for the half and half if desired.

Directions
  • Prepare cake as directed and cook in two round cake pans. Invert on rack and let cool.
  • In medium bowl, combine milk and extracts. Beat in pudding mix on medium-low speed for 2 minutes. Fold in thawed whipped topping. Refrigerate 3-5 minutes.
  • Place one cake layer on platter. Spread with half the raspberry preserves. Spread 3/4 of the filling over top. Spread remaining preserves over second cake layer; invert over filling on first layer. Cover. Refrigerate until filling is firm, approximately 1 hour.
  • Before serving, sift confectioners' sugar over top. Garnish top with remaining filling, and raspberries, if desired.
VARIATION: This cake can also be made using a 13x9 inch pan and using the mousse as the frosting.

  • 1 can cream of celery soup
  • 1/2 cup sour cream

  • 1 onion - small, finely chopped
  • 1 teaspoon chili powder
  • 2 cups diced leftover turkey
  • 1 can (4 oz.) chopped green chiles
  • 8 tortillas - 8-inch
  • 1 cup shredded cheddar cheese or Monterey Jack
Directions
  • Preheat the oven to 350 degrees F.
  • Combine the soup and sour cream together in a bowl; set aside.
  • Melt the butter in a saucepan; add the onion and chili powder. Cook until the onions are tender and slightly browned.
  • Add the turkey, chilies, and 2 tbsp. of the soup mixture to the saucepan.
  • Grease the baking dish and then add 1/2 cup of the soup mixture; spread over the bottom of the dish.
  • Spread the turkey mixture down the center of each of the tortillas. Divide out mixture evenly between the eight tortillas.
  • Roll the mixture up in the tortilla and place them seam side down in the baking dish.
  • Pour the remaining soup mixture over the tortillas in the baking dish. Sprinkle with cheese.
  • Place in preheated oven and bake for 25 to 30 minutes or until mixture is bubbling.

  • 5 tablespoons salt
  • 1 tablespoon pepper
  • 2 tablespoons chili powder
  • 1 cup vinegar
  • 2 cans tomato paste - 6 oz. can
Directions
  • Remove the skins and chop the tomatoes.
  • Chop the onions, green peppers, and jalapenos into small pieces. Be sure to remove the seeds from the jalapenos before chopping.
  • Mince the garlic cloves.
  • Place these vegetables and all the rest of the ingredients into a large pot.
  • Cook over medium high heat until the salsa mixture comes to a full rolling boil.
  • While the salsa is cooking, prepare canning lids and rings by placing in a saucepan, covering with water, and bring water to a simmer. Once lids have come to a simmer, turn heat off but leave saucepan with lids on the burner and allow lids to remain in the hot water until ready to use.
  • After the salsa comes to a full boil carefully pour the hot salsa into canning jars.
  • Wipe any salsa off the rim of the jar that might have spilled when filling the jars; seal with canning lids and rings.
  • Set the jars aside and allow the salsa to cool completely. The jars should seal while they are cooling.

Directions
Combine all meatball ingredients. Shape into balls. Roll in flour. Brown well. Put in casserole dish.

For the sauce, add tomato juice, onion salt and chili powder to the pan you browned the meatballs in. Be sure to scrape up all the browned bits from the bototom. Simmer for 15 minutes.

Pour sauce over meatball. Bake at 350° for 1 hour.

  • 3 cups flour

  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup shredded Monterey Jack cheese
  • 1 can beer
  • 2 tablespoons butter , melted and divided
Directions
  • Preheat the oven to 375 degrees F. Grease a 9 x 5 loaf pan and set aside.
  • Heat the oil over medium-low heat and then add the onion. Cook onion until browned.
  • Add in the pepper and garlic; cook an additional minute.
  • Combine the flour, sugar, baking powder, and salt in a bowl; stir with a whisk to mix.
  • Add the browned onion mixture, cheese, and beer; stir just until moistened.
  • Pour into the prepared loaf pan and drizzle 1 tablespoon of melted butter over the top.
  • Bake for 35 minutes and then take out of the oven and drizzle the other tablespoon of melted butter over the top of the loaf.
  • Put bake in the oven and bake for another 25 minutes. Loaf should be golden brown and a toothpick poked in the center should come out clean.
  • Remove from the oven and let stand for 5 minutes before removing from the pan.
  • Cool completely on a wire rack before storing. (You can eat it when it is still a little warm but it won't slice as easily.)

COOKIE DOUGH:
  • Preheat oven to 375° F.
  • In a large mixing bowl, combine sugars, butter, milk, eggs, root beer extract, and vanilla; mix until well blended.
  • Add flour, baking soda, and salt. Beat until a soft dough forms.
  • Drop dough in 1 to 1 1/2 teaspoon-size balls onto prepared cookie sheet. Place the dough balls approximately 2 inches apart.
  • Bake for 10 minutes or until the cookies are just turning brown.
  • Cool completely.

FROSTING:
  • In a small mixing bowl, combine powdered sugar, half and half, butter, and root beer extract; mix until smooth.

Peppered Beef Tenderloin with Portobello Marsala Sauce Recipe

  • 1 beef tenderloin, trimmed (4 lbs)
  • 2 teaspoons freshly ground black pepper
  • 1 teaspoon kosher salt
  • 1 teaspoon lemon pepper
  • 1/4 teaspoon granulated garlic
  • 1/4 teaspoon dried thyme
  • SAUCE:
  • 3 tablespoons butter, divided
  • 1 package baby portobello mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 shallots, diced
  • 2 cups Marsala wine
  • 1 cup chicken broth
Directions
  • Ask the butcher to trim the tenderloin or do it yourself using a sharp, thin knife to cut away the top layer of fat and the thin membrane called silver skin.
  • Combine the black pepper, salt, lemon pepper, garlic, and thyme; pat mixture evenly over the beef. Cover and let stand at room temperature for 30 minutes.
  • Place a lightly greased rack in a roasting pan. Place beef on the rack. Broil 6 inches from heat for 15 minutes.
  • Reduce oven temperature to 375° and bake 30-35 minutes or until a meat thermometer inserted into thickest portion registers 140° or to desired degree of doneness. Remove from oven; let stand 10 minutes before slicing.
  • For Portobello Marsala Sauce, melt 1 tablespoon butter in a medium skillet over high heat; add mushrooms, and saute 10 minutes or until mushrooms are browned and liquid is evaporated. Add 1 tablespoon butter, garlic, and shallots to skillet; saute 5 minutes. Stir in Marsala and chicken broth, loosening browned bits from bottom of skillet. Bring to a boil, and cook 20 minutes or until reduced by two-thirds. Remove from heat, and stir in remaining butter. Serve over beef.

Wash, scrub and halve red potatoes.

Pour olive oil and seasonings in a large baking pan. Add steamed potatoes, and gently toss them until they are completely coated with the oil mixture. Bake for 12 minutes in a 450° oven or until the outsides of the potatoes are crusty. Stir potatoes occasionally to bake evenly.

  • pre-baked single pie crust
Directions
  • Separate the egg whites from the yolks. Set whites aside to be used for the meringue.
  • Add all the yolks, milk, sugar, corn starch, and salt in a medium saucepan. Cook over medium heat until mixture begins to boil or until thick. Stir constantly to prevent it from burning on the bottom.
  • Remove from the heat and stir in the vanilla until well blended.
  • Add the coconut and stir until evenly distributed.
  • Pour into a pre-baked pie crust.
  • Begin making the meringue topping by placing the egg whites in a mixing bowl. Beat until whites form a soft peak
  • Add the salt and then begin adding the sugar one or two tablespoons at a time, beating after each addition until all the sugar has been added.
  • When all the sugar has been added, continue to beat the meringue until it forms stiff peaks. Add the cream of tartar and beat just enough to mix it in. Do not overbeat at this point.
  • Pour the meringue over warm pie filling and spread out evenly, making sure the meringue touches the crust all around the edges so that there is not any gaps between it and the crust.
  • Form peaks on the meringue and then place it on the bottom rack in an oven preheated to 350°F. Bake for 9 or 10 minutes or until the meringue is lightly browned. Watch it carefully because it will brown quickly.
  • Remove from the oven and allow the pie to cool completely before serving so that the filling has time to thicken properly.

  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • 2/3 cup bananas, mashed
  • 2 cups flour
  • 1/2 cup milk
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cloves
  • 1/2 teaspoon allspice
  • 1/2 cup nuts, chopped (optional)
  • FROSTING:
  • 1/4 cup butter, softened
  • 3 ounces cream cheese, softened
  • 1 teaspoon vanilla
  • 2 cups powdered sugar
Directions
Preheat oven to 350 degrees F. Grease a jelly roll pan.

Cream shortening and sugar.

Add eggs and mashed bananas.

Add the remaining cake ingredients.

Spread into prepared jelly roll pan. Bake for 15-20 minutes; cool.

For frosting, mix butter, cream cheese, vanilla and powdered sugar until smooth. Spread on cooled cake.

Ingredients
  • 12 slices bacon
  • 1/2 cup butter
  • 1 onion , diced
  • 3 stalks celery , diced
  • 1 cup carrot , grated
  • 1/2 cup flour
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 6 cups milk
  • 4 large potatoes - baked, peeled and diced
  • 1 1/4 cups cheddar cheese - shredded
  • 1/2 cup chicken broth
Directions
  • Preheat oven to 400 degrees. Place bacon on a large baking sheet. Bake for 12-15 minutes, until crisp. Set aside.
  • In a large pot, melt the butter over medium heat. Add the onion, celery and carrot. Cook until softened, approximately 10 minutes.
  • Whisk in flour until smooth. Season with salt and pepper.
  • Gradually stir in milk, whisking constantly until thickened. Stir in already baked potatoes. Bring to a boil, stirring frequently.
  • Reduce heat. Add 1 cup of the cheese and stir until melted. Add chicken broth and simmer 10 minutes.
  • Serve with bacon and remaining cheese.

  • 2 1/2 pounds ground beef
  • 3/4 onion, finely chopped (medium)
  • 1 cup finely diced celery
  • 1 cup ketchup
  • 1/4 cup chicken broth, stock or water
  • 2 tablespoons vinegar
  • 1 tablespoon lemon juice
  • 1/8 cup brown sugar
  • 1/2 teaspoon dry mustard
  • Salt & pepper to taste
Directions
Brown ground beef with onion and celery until no longer pink; drain.

Combine all ingredients simmer over low heat, stirring frequently. The longer it simmers, the better.

To searve, place 1/2 cup meat onto the bottom of a plain hamburger bun or Kaiser roll. Replace bun tops and heat in the microwave for 10-15 seconds to warm the bun, if desired. Serve with a spoon. Offer dill pickles as a garnish.

  • 6 pork chops
  • salt and pepper, to taste
  • 3 tablespoons oil
  • 1 can cream of chicken soup
  • 1 onion, chopped
  • 3 tablespoons ketchup
  • 2 tablespoons Worcestershire sauce
Directions
Season pork chops with salt and pepper. Brown pork chops in hot oil on both sides.

In a medium bowl, mix soup, onion, ketchup and Worcestershire sauce.

Place chops in a baking dish. Pour mixture over the top of the pork chops and cover.

Bake at 350 degrees for 1 hour or until tender.

  • 30 graham crackers (3 cups crumbs)

  • cinnamon
  • 2 cans blueberry pie filling
Directions
  • Mix graham crackers with 1/2 cup sugar. Mix in melted butter.
  • Mix thoroughly and press into a 9"x13" pan.
  • Beat eggs with vanilla, cream cheese and 1 cup sugar. Beat until smooth.
  • Spread on crumbs, sprinkle with cinnamon.
  • Bake 15-20 minutes at 350 degrees F.
  • Remove from the oven and allow to cool completely. Cover the top with the blueberry pie mix. Refrigerate.
