  • 3 pounds meaty beef short ribs
  • 2 teaspoons salt
  • 1 teaspoon black pepper, preferably freshly ground
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder (optional)
  • 1 cup dry red wine (see TIP)
  • 1 large onion, chopped
  • 4 cloves garlic, minced, or to taste
  • 3 tablespoons tomato paste
  • 1 tablespoon soy sauce
Directions
  • Trim off any large areas of surface fat from the ribs. Mix together  salt, pepper, paprika and garlic powder (if using) and rub this mixture into the meat. If time allows, wrap the seasoned meat snugly and refrigerate for an hour or more - overnight, if possible.
  • Add wine, onions, garlic, tomato paste and soy sauce to the slow cooker. Stir to mix well, then snuggle the meat down into the liquid. Cover and cook on low for 8 - 10 hours, until the meat is tender.
  • If the sauce seems too fatty, pour it out of the cooker into a jar. Let stand a few minutes and spoon off fat as it rises to the surface. ( It's easier to remove the fat from a tall narrow container than from the wide area of the cooker.) Adding a few ice cubes can speed up this step.
  • Return sauce to cooker, or reheat in microwave, if necessary.
  • Serve hot, with some sauce spooned over meat. Pass extra sauce to add at table, as desired. This is especially good with polenta, mashed potatoes or noodles.
  • TIP: To keep wine on hand for cooking, get a drinkable-quality box wine; it will keep for weeks without refrigeration.

  • 1/2 cup milk
  • 1 package (8 ounces) cream cheese, softened
  • 1 cup sour cream
  • 2 teaspoons McCormick® Parsley Flakes

  • 1/4 teaspoon McCormick® Nutmeg, Ground
  • 3/4 cup shredded Cheddar cheese
  • 12 slices bacon, crispy cooked and crumbled (about 1/2 cup)
Directions
1. Preheat oven to 350° F. Place all ingredients, except cheese and bacon, in large bowl. Beat with electric mixer on medium-high speed until potatoes are smooth and creamy.

2. Spoon mixture into lightly greased 13x9-inch baking dish. Sprinkle with cheese and bacon. If you prefer extra crispy bacon, reserve bacon and sprinkle at the end of cooking. Cover.

3. Bake 30 minutes or until heated through.Test Kitchen Tip: Start with about 4 pounds uncooked potatoes to yield 5 1/2 cups mashed potatoes. For faster preparation, start with instant or refrigerated prepared mashed potatoes.

  • 1 bunch broccoli
  • 3 tablespoons olive oil
  • 1/2 teaspoon garlic salt, or to desired taste
Directions
  • Preheat oven to 375° F (350° F for a 12" Dutch oven).
  • Cut broccoli florets leaving a portion of the stem with each floret. Place in baking dish or 12" Dutch oven.
  • Coat broccoli with olive oil and sprinkle with garlic salt. Place the cover on the baking dish or cover with foil.
  • Place covered dish in the oven and cook for 20-30 minutes. Check for doneness after 15 minutes to be sure you do not overcook the broccoli. It should be crisp-tender when done. Cooking time will vary depending on the amount of broccoli and your personal taste.
  • Remove from heat and transfer to serving dish.
NOTE: This is the easiest side dish to make and I have people devouring large quantities who say they would never touch broccoli. Be sure when you are adding the garlic salt to use your own judgment on how much to use. That will also depend on how much broccoli you are actually preparing.

  • 1 head garlic
  • 4 cups cauliflower florets
  • 2 cups broccoli florets
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 stalks celery, diced
  • 2 cups milk
  • 2 cups chicken broth (or vegetable stock)
  • 1 teaspoon rosemary
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
Directions
Preheat oven to 425 degrees. Remove loose paper from garlic and cut off the top portion to expose the tips of the cloves. Wrap head in foil. Place on baking sheet along with cauliflower. Roast in oven for 30 minutes, stirring halfway through. Meanwhile, in a stock pot, heat oil over medium heat. Saute onions and celery until softened. Add milk, broth, rosemary and bay leaf. Simmer for 10-15 minutes, stirring frequently. Squeeze garlic pulp from cloves and mash into a paste. Add to stock pot along with caulifower and broccoli. Remove bay leaf from soup. Simmer until vegetables are softened. Using a food processor, puree half of the soup mix and return to pot. Season with salt and pepper.

Directions
1. Mix tomatoes, tomato paste, water, sugar, basil, garlic powder, oregano, salt and red pepper in large saucepan. Bring to boil on medium-high heat. Reduce heat to low; simmer, uncovered, 20 minutes, stirring occasionally.

2. Meanwhile, cook pasta as directed on package, adding shrimp during last 3 minutes of cooking. Drain. Return pasta and shrimp to saucepot.

  • 1 cup chicken, cooked, diced
  • 1/4 cup ranch dressing
  • 2 teaspoons chili powder
  • 1/2 teaspoon lime zest
  • 4 flour tortillas (8 inch size)
  • 1 cup Mexican cheese blend, shredded
  • 2 green onions, thinly sliced
  • 1 tablespoon vegetable oil
  • 1/4 cup sour cream, if desired
Directions
Heat gas grill to medium-low heat.

In medium bowl, mix chicken, dressing, chili powder and lime peel. Spread chicken mixture over half of each tortilla. Sprinkle with cheese and green onions. Fold tortilla over filling and press down. Brush tops with oil.

Place quesadillas, oil sides down, on grill. Brush tops with remaining oil. Cover grill. Cook 4-6 minutes, turning once, until both sides are golden brown and cheese is melted.

Remove from grill, cut into wedges and serve with sour cream, if desired.

  • 3 cups water
  • 2 cups (uncooked) long grain white rice
  • 1 tablespoon chicken base (or 3 chicken bullion cubes)
  • 1 cup bell pepper, diced (red, yellow, green, or any combo you like)
  • 1/2 onion, diced small
  • 1 medium tomato, diced small
  • 1/4 cup fresh cilantro, finely diced
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons butter
  • 1 teaspoon kosher salt (to taste)
  • 2 tablespoons lime juice (to taste)
Directions
  • Preheat oven to 425 degrees F.
  • In a Dutch oven, add the water, rice, chicken base, vegetables, seasonings and butter, except the salt and lime juice. Bring the water to a boil stirring very little.
  • Cover the pan and place it in the preheated oven for 15-20 minutes, or until almost all of the water is absorbed.
  • Remove the pan from the oven but leave it covered and sitting for 5 minutes.
  • In a small bowl, combine the salt and lime juice.
  • Remove the lid long enough to stir in the salt and lime juice; recover the pan and let sit another 5 minutes.
  • Serve and enjoy.

  • 1 tablespoon cooking oil, for browning
  • 2 medium onions, sliced
  • 3 cloves fresh garlic, sliced

  • water - 1/2 inch in bottom of roaster
  • 18 ounces BBQ sauce, flavor of your choice
Directions
  • Preheat oven to 275 degrees F. (Quantities in this recipe may be adjusted according to the numbers served.)
  • On the stove top over medium high heat, add 1 tablespoon of oil to the roasting pan and brown both sides of the roast. Remove from heat when roast is browned, and add onions, garlic, seasonings and enough water to give you up to 1/2 inch of water in the roaster.
  • Place in oven; cover pan and bake for 2 hours. When the meat separates easily with a fork, shred the meat. You may need to remove some of the water after shredding the meat. Reserve that amount which may be used later in the cooking process.
  • Add at least 18 oz. of barbecue sauce and return to the oven, covered. Continue baking for at least 1 to 1 1/2 hours.
  • Add additional reserved water if the meat mixture appears too thick or dry. (The time it takes to cook this is worth the end results. An electric roaster or crock pot can also be used instead of baking in the oven.) This also freezes well.
  • Serve on a bun.

CHICKEN:
  • In a dutch oven or large skillet, brown the chicken in oil.
  • Add salt, celery, onion, carrots, pepper, bay leaf and chicken stock.
  • Heat to boiling, reduce heat and simmer covered for 20 minutes.
  • Combine the flour with water. Stir into the chicken mixture.
  • Heat over medium high heat until it boils and thickens, stirring constantly.
DUMPLINGS:
  • In a medium bowl, combine the flour, parsley, baking powder, salt and nutmeg.
  • Stir in the milk, oil and egg until the dry ingredients are incorporated.
  • Drop the dough by heaping tablespoonfuls on top of the boiling chicken mixture.
  • Cover tightly and boil gently over medium heat for 12-15 minutes or until the dumplings are done. Be sure to keep the lid on for the entire cooking time so that the dumplings will be light and fluffy. Makes 8-10 dumplings and can easily be doubled.

  • 3 pounds apples (10-12 medium)
  • 1/2 cup sugar to taste, adjust to sweetness of apple
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract (optional)
  • water as needed to adjust thickness
Directions
  • Wash, peel, core, and slice apples.
  • Place prepared apples in sauce pan. Add 1/2 inch of water to the bottom of the sauce pan and cook, partially covered, over medium to low heat, 15-20 minutes.
  • Add sugar, approximately 1/4 cup per 4 or 5 apples. Adjust the amount of sugar based on the type and sweetness of the apple variety being used. Add cinnamon and vanilla.
  • Cook for an additional 5 minutes. If sauce is too thick, add a small amount of water.
  • 10-12 medium apples make approximately 1 quart of sauce.
  • Since some apples cook up softer than others, the consistency of the sauce may vary. If a smoother textured sauce is desired, place sauce in blender or a food processor and blend until desired consistency is achieved.

  • 2/3 cup evaporated milk
  • 2/3 cup sugar
  • 2 egg yokes
  • 1/3 cup shortening
  • 1 1/3 cups coconut
  • 1 teaspoon vanilla
Directions
  • Combine evaporated milk, sugar, egg yokes, and shortening in a saucepan.
  • Over medium heat, bring the mixture to a full boil. Stir while cooking.
  • After mixture comes to a full boil remove it from the heat and add the coconut and vanilla. Stir until well mixed.
  • Spread over cooled cake. Store covered at room temperature.

  • 1 package Bakers German Sweet Chocolate
  • 1/2 cup boiling water
  • 1 cup Margarine
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 4 eggs
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 2 1/2 cups Flour
  • 1/2 teaspoon Salt
Directions
Melt chocolate in boiling water and cool. Cream margarine and sugar until fluffy. Add eggs, one at a time, beating well after each. Add vanilla and cooled chocolate. Sift dry ingredients together. Add alternately with buttermilk to chocolate mixture, beating until smooth. Bake in greased pans; either 3 layer pans or 9x13 pan at 350° for 35 -40 minutes.
