Beer Can Chicken Recipe

Beer Can Chicken Recipe

  • 1 whole chicken - 5 to 7 pounds
  • barbecue seasoning - enough to cover the chicken
  • 1/2 lemon - sliced thin (optional)
  • 2 sprigs fresh rosemary, oregano, and/or thyme - chopped (optional)
  • 1 can of beer - any brand
Directions
  • Rinse the chicken inside and out, and trim any excessive fat.
  • Sprinkle with barbecue seasoning all over the outside of the chicken and inside the cavity of the bird.
  • If you plan on using the herbs and lemon slices for flavoring, place these under the skin of the bird.
  • Pour a can of beer into the holder (if using a holder); otherwise, open the can of beer and set it in the middle of a baking sheet.
  • Place the cavity of the bird on top of the holder or beer can, and carefully slide the bird down. The bird should sit upright.
  • Wrap a long sheet of aluminum foil around the chicken leaving the bottom open around the holder or can.
  • Carefully place the bird with the beer holder or can onto the grill.
  • Heat the grill with the middle burner set to low and the two side burners set to medium. If using a charcoal grill, push the coals to the perimeter of the grill, leaving a small amount of coals in the middle.
  • Grill for 60-90 minutes depending on the size of the bird. The internal temperature of the chicken should be 180° F when a thermometer is inserted into the center of the breast.
  • The skin may become somewhat charred around the bottom, but this is to be expected.
  • Once the bird reaches 180° F, carefully remove it from the grill, tent it with foil, and let it rest for 10 minutes.
  • Carefully remove the whole bird from the can or holder; then it's ready to carve.
  • Discard any lemon slices that were used (if any).

Directions
  • Preheat oven to 375° F.
  • Cook squash and onion in boiling water for 5 minutes; drain.
  • In large mixing bowl mix together soup and sour cream, stir in shredded carrot. Fold in squash and onion.
  • In medium bowl combine stuffing mix and melted butter. Spread half of the stuffing mixture on bottom of baking dish. Spoon squash mixture over stuffing. Top with rest of stuffing.
  • Bake for 25-30 minutese. Enjoy!

  • 1 pound lean ground beef
  • 1 tablespoon oil
  • 1 large onion
  • 2 cloves garlic (optional)
  • 1 pound potatoes
  • 1 pound green beans, fresh, frozen or canned
  • 1 tablespoon Worcestershire sauce
  • salt and pepper
Directions
  • Heat oil in skillet. When hot, crumble in the ground beef. Salt and pepper lightly and cook without stirring until meat browns a bit.
  • While meat cooks, chop onion (and garlic, if using). Add to skillet and stir in.
  • Peel or scrub potatoes, cut in half the long way. Put potatoes cut side down and slice thinly (or grate coarsely). Prepare beans, if using fresh. If frozen or canned, just add to skillet along with potatoes. Mix Worcestershire sauce with 1/2 cup water, stir into skillet ingredients, and cover. Reduce heat to medium-low and cook until potatoes and beans are tender, about 15 - 20 minutes. Taste for seasoning and serve hot.

  • 1 Cook's® Bone-in Thick-Cut Ham Steak (about 2 pounds)
  • 1 jar 10-ounces Jalapeno Pepper Jelly (about 3/4 cup)
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh cilantro
Directions
  • Prepare grill for medium heat.
  • Combine jelly and garlic in small saucepan; cook over medium heat 2 minutes, or until jelly is completely melted, stirring occasionally. Remove from heat. (Or, combine in small microwavable bowl. Microwave on HIGH 1 minute, or until jelly is melted.) Stir in cilantro. Reserve 1/4 cup jelly mixture; set aside.
  • Grill ham steak 5 minutes; turn over. Brush with half of the remaining jelly mixture; continue grilling 10 minutes, until ham reaches an internal temperature of 160°F when tested in center with meat thermometer, turning ham steak over and brushing with remaining jelly mixture after 5 minutes.
  • Serve with the reserved jelly mixture.

  • 6 tablespoons butter - softened
  • 1 clove garlic - minced
  • 2 tablespoons minced parsley
Directions
  • Prepare corn by removing any outside husks that may be badly damaged. Then pull back the remaining husks without removing them from the ear. Remove all the silk from the ear and tie pulled back husks with kitchen string to form a handle for the corn.
  • Mix butter, garlic and minced parsley together until smooth. Lightly brush ears of corn with butter mixture.
  • Place corn directly over medium coals with husks off the side so they do not burn or place foil under them on the grill in the area of the husks.
  • Cook corn for 10 to 12 minutes, turning frequently. Lightly brush the corn with the butter mixture each time the ears are turned. When the corn is done, the ears should be nicely browned.
  • Serve with tied husks, using them as a handle to hold on to while eating.

  • Cut chicken into bite-size chunks, chop celery, and shred the carrots.  Mix those ingredients with the pineapple tidbits.
  • Whisk mayo, sour cream, curry powder, lemon juice, and salt together in a small bowl. Pour over chicken mixture. Chill.
  • When ready to serve, add slivered almonds.
  • Place lettuce leaves on individual plates, pile chicken salad on top, or serve chicken salad in creme puffs.

Bread-making may seem difficult, but the process is really quite simple and the actual working time is minimal, especially when using a food processor. Although the aroma of baking bread is a reward in itself, the satisfaction of serving up the finished product is the real payoff.
Basic French Bread Recipe

  • 3 cups flour, plus a little extra in case you need it
  • 1 package dry yeast
  • 1/2 teaspoon sugar or honey
  • 1 1/2 teaspoons salt
  • 1 1/4 cups water
Directions
  • Dissolve sugar in warm water; sprinkle dry yeast over water and leave until the yeast gets frothy - 5 to 10 minutes.
  • Meanwhile, put flour and salt in food processer and pulse briefly to mix.  Pour in the frothy yeast water and process 30- 40 seconds. The dough should form a rough ball.
  • Put the dough into a fairly large bowl (to allow for its volume when raised) and let rise, covered, in a warm draft-free place, until it has almost doubled in volume, about an hour. (Tip: to create a warm, draft-free place, microwave a glass of water for 2 minutes then put the dough in the microwave to rise along side the heated water.)
  • Sprinkle a little flour on a work surface. Scrape out the dough onto the floured surface and divide in half.  Press and knead each piece for a minute to get out any air bubbles, then roll into cigar-shaped loaves to fit the baking pan(s). Put loaves into lightly oiled pan(s). Make several diagonal slashes in the top and cover with a damp cloth. Let rise until almost doubled, about an hour.
  • When the dough seems almost risen, preheat oven to 425. Bake for 25 -35 minutes. The bread is done when the bottom of the of the loaf  sounds hollow when tapped.  Remove from pan to cool.

  • Unroll crescent rolls on bottom of pan.

  • Cook ground beef (can add chopped onions) and taco seasoning as usual. Turn off heat.
  • Mix in sour cream (this will look bad, but will taste yummy!). Pour mixture over chips.
  • Sprinkle with 1 cup of cheese.
  • Crumble 2-3 more handfuls of chips to cover and add remaining cheese to top.
  • Bake uncovered for 30-35 minutes.
  • Cut into squares for serving.
  • Can add picante sauce or taco sauce on top as well.

  • Dish two scoops of vanilla icecream into each serving dish. Slice each scoop in half and nestle the banana into the slice.
  • Pour the peanut butter down the center of each banana.
  • Top with mini chocolate chips, peanuts and chopped reserved pieces of banana.
  • Note: For a healthier variation, top with raisins instead of chocolate chips and use frozen yogurt in place of the ice cream.

  • Lay steak out flat. Salt and pepper to taste.
  • In a mixing bowl, combine the roasted red pepper and cream cheese. Mix until smooth.
  • Spread cream cheese mixture over the steak.
  • Sprinkle on the spinach and feta.
  • Then add the diced artichokes and tomatoes.
  • Finally, sprinkle all with the shredded cheese.
  • Roll the steak up from the long edge, like a jellyroll, and secure with kitchen twine.
  • Heat grill to medium heat.
  • Grill steak on all sides until browned, approximately 12 minutes total.
  • Reduce heat to low and brush steak with olive oil.
  • Rotate and brush the steak every 10 minutes for 20-30 minutes or until the internal temperature reaches 145°.
  • Remove from heat and allow to rest for 5 minutes.
  • Place on a serving platter and remove the kitchen twine.
  • Cut into 1 inch slices and serve warm.

Ingredients
  • 1 can condensed cream of mushroom soup
  • 1 cup mayonnaise
  • 1 egg , beaten
  • 1/4 cup onion , finely diced
  • 1 teaspoon salt
  • 1/4 ground black pepper
  • 1/2 teaspoon paprika
  • 30 ounces frozen broccoli florets
  • 12 ounces shredded cheddar cheese
  • 1/2 cup buttery crackers, crushed
  • 2 tablespoons butter , melted
Directions
  • Preheat oven to 350 degrees F. Butter a 9x13 inch baking dish.
  • In a medium bowl, combine soup, mayonnaise, egg, onion and seasonings.
  • Put broccoli in a large mixing bowl. Stir in soup mixture and mix well. Add cheese and mix until combined.
  • Spread mixture into prepared baking dish, and smooth top of casserole.
  • In a small bowl, combine crushed crackers and butter. Sprinkle on top of broccoli mixture.
  • Bake for 45-55 minutes in the preheated oven.

Grape Blueberry Salad Recipe

Ingredients
  • 2 packages grape Jell-O - 3 oz.
  • 2 cups boiling water
  • 1 can blueberry pie filling
  • 20 ounces crushed pineapple and juice
  • 8 ounces cream cheese
  • 1 cup sour cream
  • 1/3 cup sugar
  • Nuts (optional)
Directions
  • Combine Jell-O and boiling water; dissolve the Jell-O.
  • Add the pineapple juice. Chill until partially set.
  • Add blueberry pie filling and pineapple. Let set.
  • Blend the cream cheese, sour cream, and sugar together.
  • After Jell-O mixture is set, spread the cream cheese mixture on top.
  • This salad is pretty in a glass bowl or can be made in 9 X 13 pan.
