  • 2 teaspoons shallots - chopped
  • 1 teaspoon garlic - minced
  • 2 teaspoons Dijon mustard
  • 2 tablespoons oregano
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • pinch salt
  • 1/2 pound red skinned potatoes - about 15, skins on
  • 4 chicken breasts - boneless, skinless
  • olive oil - to coat the chicken, potatoes, and asparagus
  • 1 bunch asparagus - stemmed
  • salt and pepper - to taste
Directions
  • For the sauce/dressing, add the first 7 ingredients to a clean jar, tighten the lid, and shake well; set aside.
  • Bring a pot of water to a boil.
  • Cut the potatoes in half. Place in the boiling water and cook only until crisp tender, about 15 minutes.
  • Drain the potatoes and lay out on a baking sheet to dry.
  • Meanwhile, preheat the grill to medium.
  • Brush the chicken breasts with olive oil and season with salt and pepper.
  • Toss the asparagus with a small amount of olive oil.
  • Place the chicken breasts on the grill and cook one side until browned, about 8 minutes; then turn the chicken and grill the other side.
  • Place the asparagus on the grill and cook until crisp tender, about 5 minutes; turn occasionally.
  • Sprinkle olive oil over the potatoes and toss to coat; then sprinkle with salt and pepper.
  • Place the potatoes on the grill, cut side down. Grill until browned and grill marks appear, about 5 minutes.
  • Remove everything from the grill, place on a large platter, and shake the dressing jar to re-combine the ingredients; then pour the lemon Dijon sauce over all. Serve warm.

  • 16 ounces vermicelli pasta - broken into 2" pieces and cooked according to package directions
  • 1 tablespoon Ac'cent flavor enhancer
  • 1 tablespoon seasoned salt
  • 3 tablespoons lemon juice
  • 4 tablespoons vegetable oil
  • 1 (4 oz.) diced pimento
  • 1 cup green pepper - chopped
  • 1/2 red onion - chopped
  • 1 cup celery - thinly sliced
  • 1 cup black olives - chopped
  • 1 1/2 cups mayonnaise
Directions
  • Place cooked vermicelli in large bowl and add the Ac'cent flavor enhancer, seasoned salt, lemon juice, vegetable oil.
  • Stir to combine. Cover and refrigerate overnight.
  • Remove pasta mixture from the refrigerator and add diced pimentos, green pepper, red onion, celery, black olives and mayonnaise.
  • Mix all, chill for one hour and serve.

  • 1 pound fresh asparagus
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce

Directions
  • Soak skewers in water for 30 minutes or more; preheat the grill.
  • Wash the asparagus and snap off the tough ends.
  • Mix the olive oil and soy sauce. Brush or rub the mixture over the asparagus spears.
  • Line up 4, 5, or 6 spears of asparagus and pierce near the base and top with sharp skewers. Leave a little space between the spears to aid cooking.

  • 1/2 cup butter - at room temperature
  • 1 egg
  • 1 cup white baking chips
  • 8 ounces cream cheese - softened
  • 4 cups strawberries - fresh and sliced

  • 2 tablespoons cornstarch
  • 1/3 cup water
Directions
  • Heat oven to 350° F.
  • Spray the bottom of the pan with a non stick cooking spray.
  • Mix the sugar cookie mix with the butter and egg until combined.
  • Press the dough into the bottom of the baking pan.
  • Bake for 15 minutes or until just turning brown and then cool completely on a cooling rack.
  • Melt the baking chips in a microwave until the chips are melted and smooth.
  • Beat the cream cheese until smooth with a hand mixer and then add in the melted chips and mix until combined.
  • Spread the cream cheese and chips over the crust and refrigerate.
  • In a small bowl, smash approximately 1-1 1/2 cups of the strawberries with 1/3 cup water, cornstarch and sugar.
  • Place this in a small saucepan and heat, stirring constantly, until the mixture boils and thickens.
  • Allow this to cool for 10-15 minutes and then stir in the remaining strawberries.
  • Spoon over the filling and refrigerate until ready to serve.

  • 6 russet potatoes, large - cooked, peeled, and diced
  • 4 eggs - hardboiled, peeled, and chopped
  • 2 onions, medium - peeled and grated
  • 1 cup celery - diced
  • 1 cup salad dressing
  • 2 tablespoons cider vinegar
  • 1/4 cup pickle relish (sweet)
  • 1/4 cup pimento - diced
  • 1 tablespoon prepared mustard
  • 1 teaspoon celery salt
  • 2 teaspoons sugar
  • 1/3 cup stuffed green olives - chopped (optional)
  • fresh parsley sprigs (optional)
Directions
  • Cook the potatoes; then cool, peel, and dice.
  • Hard boil the eggs; then cool, peel, and chop.
  • Peel the onions and grate or chop fine.
  • Dice the celery fine.
  • Add the chopped potatoes, eggs, onions, and celery to a serving bowl, cover, and refrigerate while preparing the rest of the ingredients for the dressing.
  • Blend together the salad dressing, vinegar, pickle relish, pimento, mustard, celery salt, and sugar; then pour this sauce over the potato mixture and toss.
  • Cover the salad and refrigerate it for at least 1-2 hours for the flavors to blend properly. You may garnish the potato salad with olives and fresh sprigs of parsley for added flavor and color.

  • 1/2 pound bacon
  • 1/2 cup ketchup
  • 1 teaspoon mustard

  • 1 can Lima beans
  • 1 can Red Kidney Beans
Directions
  • Brown hamburger in pan.
  • Brown bacon in another pan and pour off excess grease.
  • Layer the bacon on hamburger in a casserole dish.
  • Mix together ketchup, mustard, vinegar, brown sugar and onion. Pour on top of meat mixture in dish.
  • Add the 3 remaining ingredients.
  • Bake at 350 degrees F. for 40 minutes. This can also be put in a slow cooker for cooking.

  • 1 package refrigerated sugar cookie dough
  • 1 cup chopped coconut
  • 1 1/2 cups milk
  • 1 package vanilla flavored instant pudding
  • 2 cups miniature marshmallows
  • 1 1/2 cups whipped topping
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups blueberries
  • 1 1/2 cups raspberries
  • 1/2 cup miniature marshmallows
Directions
  • Preheat oven to 375° F.
  • Line a pizza pan with foil and lightly spray the foil with non-stick cooking spray.
  • In a medium sized bowl, combine the packaged cookie dough with coconut. Mix with your hands until all the coconut is combined with the dough. Press cookie dough onto prepared pizza pan.
  • Bake for 15 minutes or until the dough is golden brown. Cool completely.
  • Pour milk into a large mixing bowl and add the dry pudding mix. Beat with a wire whisk for approximately 2 minutes. Stir in whipped topping, marshmallows, and vanilla extract.
  • Spread pudding mixture over the cookie crust. Top with fruit and extra marshmallows. Any variety of fruit can be used for this recipe.

  • 1/2 cup rice vinegar
  • 1/3 cup plus 3 tablespoons soy sauce
  • 1/2 cup hoisin sauce
  • 1 1/2 tablespoons grated fresh ginger

  • 1 1/2 pounds boneless, skinless chicken breasts
  • salt and pepper to taste
  • 1/2 head Napa cabbage, shredded
  • 1 large red bell pepper, thinly sliced
  • 1 bunch scallions
  • 1 cup chow mein noodles
Directions
  • In a medium bowl, whisk vinegar, 3 tablespoons of soy sauce, hoisin sauce, ginger, and sesame oil together.
  • Place chicken in a single layer into a roasting pan. Pour 1/2 cup of the vinegar mixture over chicken; reserve remaining vinegar to use as a dressing. Add remaining 1/2 cup soy sauce and 3 cups of water to the roaster. Bring to a boil over medium high heat on stove top. Cover, reduce heat and simmer chicken until done. (Approximately 10 minutes)
  • Transfer chicken to a plate and refrigerate until cool.
  • Shred chicken and place in a large salad bowl. Add 2 tablespoons of dressing, salt and pepper, and toss. Add cabbage, bell pepper, scallions, and remaining dressing and toss. Sprinkle with chow mein noodles.

Easy Egg Rolls Recipe

  • Vegetable oil
  • 2 skinless boneless chicken breasts
  • Broccoli Cole Slaw mix
  • Soy sauce
  • 1 package egg roll wraps
Directions
  • Heat oil in fryer so this is ready for use.
  • Cook and dice chicken.
  • Pour Cole slaw mix into skillet and pick out any large purple cabbage pieces; this will help to prevent the egg roll wraps from tearing while rolling.
  • Mix in chicken. Top with soy sauce, as much or as little as you would like.
  • Cook until cole slaw is tender. Takes about 15 minutes.
  • Pull apart egg roll wraps and spoon mixture on to wrapper.
  • Follow instructions on package on how to wrap.
  • Place finished egg roll in to hot deep fryer and cook for around 4 to 5 minutes.
  • Serve with Easy Cashew Chicken for a great meal.

  • 1 tablespoon shortening or vegetable oil
  • 2 tablespoons cornstarch
  • 1/2 cup brown sugar
  • 13 ounces 1 can, pineapple tidbits, drained and reserve syrup
  • 1/3 cup vinegar (apple cider)
  • 1 tablespoon soy sauce
  • 1/3 cup green pepper
Directions
  • Mix together beef, crumbs, onion, egg, salt, ginger & milk.
  • Shape mixture into 1" balls.
  • Melt shortening or vegetable oil in large skillet.
  • Cook and brown meatballs until done, 10-15 minutes. Remove and keep warm in 200 degree oven.
  • Pour fat from skillet, discard.
  • Mix cornstarch and sugar. Whisk in reserved pineapple syrup, vinegar, and soy sauce until smooth. Pour into skillet, cook over medium heat, whisking constantly until mixture thickens and boils.
  • Add meatballs, tidbits and green pepper. Heat thoroughly.
  • *Can be stored and/or frozen in plastic sealed bags or container.

Directions
  • Pour the chicken stock into a medium sized saucepan. Water can be substituted, but chicken stock (or any other type of stock) adds more flavor to the dish.
  • Add the olive oil and a pinch of salt to the liquid and bring to a boil.
  • Add the couscous to the boiling liquid.
  • Remove the pan from the heat, cover, and let it stand for about 6 minutes. Do not lift the lid until the suggested time has expired.
  • Fluff the couscous with a fork and serve immediately.
  • Note: Serve it as an accompaniment to stews, meats, vegetables, and other savory dishes that include sauces or gravy. Couscous is able to absorb the flavors of the other ingredients that are added to it.
  • Variations: An endless variety of other ingredients may be added to the couscous to provide flavor. Chopped dried fruit or chopped nuts are popular additions, as well as various seasonings, such as cinnamon, ginger, cumin, black pepper, garlic, or the zest of citrus fruit.

  • 20 ounces can crushed pineapple, drained - reserve juice
  • 2 cups flour
  • 1 cup butter or margarine - softened
  • 6 tablespoons powdered sugar
  • 4 eggs
  • 2 cups sugar
  • 1 cup pine nuts - toasted and chopped, can also use macadamia nuts
  • 1 cup flaked coconut
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon rum extract
  • 4 ounces cream cheese - softened and chunked
  • FROSTING:
  • 1/2 cup powdered sugar
  • 7 tablespoons reserved pineapple juice - or more if desired
  • 4 ounces cream cheese - softened
  • 1/2 teaspoon rum extract
Directions
  • Heat oven to 350°.
  • Grease bottom and side of a 9x13 pan.
  • Drain pineapple, reserve juice.
  • In a medium bowl mix flour, butter and powdered sugar until well combine and crumbly.
  • Press in the pan and bake for 10 minutes.
  • In same bowl, beat eggs with a wire whisk until blended.
  • Stir in pinapple, nuts, coconut, 1/2 cup flour, baking powder, cream cheese, salt and rum extract.
  • Spread over partially baked crust.
  • Return to the oven and bake for 30-40 minutes or until golden brown.
  • Cool completely before frosting.
  • In a small bowl, mix frosting ingredients until smooth.
  • You can thin it out with more pineapple juice if you want it to be more like a glaze and not as thick as a frosting.
  • Glaze or frost the bars and allow to set before serving.

  • 4 slices American cheese
  • 2 tablespoons strawberry preserves (can substitute any flavor)
Directions
  • Butter one side of each slice of bread. Place 2 slices of bread, butter side down onto a plate. Layer each slice of bread with 1 to 2 slices of American cheese and 1 tablespoon of strawberry preserves. Cover with remaining slice of bread, butter side up.
  • Melt a small amount of butter in a skillet over medium high heat. Place prepared sandwiches into skillet. Lightly brown each side of sandwich.
  • Remove from heat, slice each sandwich in half and serve.

  • Cut peeled eggs in half lengthwise and scoop out yolks into a small bowl. Mash yolks with a fork and add mayonnaise, mustard and paprika. Stir to combine. Salt and pepper to taste.
  • Fill empty egg white halves with egg mixture and garnish as desired. Keep in refrigerator until ready to serve.

  • 8 ounces fresh mozzarella - sliced thin

Directions
  • Sprinkle olive oil over the pizza crusts.
  • Place each on a baking sheet.
  • Peel and devein the shrimp. Sprinkle the shrimp with olive oil and 2 teaspoons of Old Bay Seasoning. Stir the shrimp to coat.
  • Heat the grill to medium heat, place the shrimp in a grill basket, and then place the basket on the grill.
  • Grill for approximately 3-5 minutes or until the shrimp turn pink.
  • Spread 1/2 cup of green chile sauce over the pizza crusts; then layer thin slices of fresh mozzarella cheese on each crust.
  • Place the shrimp on a cutting board and dice.
  • Sprinkle half of the shrimp over the mozzarella slices on each crust; then sprinkle half of the green onion on each and then the romano cheese.

  • 11 ounces refrigerated breadsticks
  • 2 tablespoons creamy herb cheese - Alouette works well
  • 2 tablespoons goat cheese
  • 1 egg whites - slightly beaten
  • salt and pepper
Directions
  • Unroll the breadsticks individually.
  • Make a "well" down the center of each with a knife our your finger.
  • Mix together the two cheeses and spread the cheese down the center of each breadstick, fold over and pinch the ends together.
  • Slightly twist each breadstick and place on a baking sheet.
  • Pressing the ends firmly onto the sheet so that they will not untwist.
  • Brush each with the beaten egg white.
  • Sprinkle with salt and pepper.

  • 5 pounds beef brisket (5 to 6 pounds)
  • 2 cloves garlic (large), peeled and sliced
  • 2 sweet large onions, sliced
  • 12 ounces chili sauce
  • 1 package dry onion soup mix
  • 12 ounces stout beer
  • 1/2 cup water
Directions
  • Preheat oven to 350° F.
  • Spray roasting pan with non-stick cooking spray and place brisket in the pan. Cut numerous slits into brisket and insert sliced garlic. Cover top of brisket with sliced onions and chili sauce.
  • In a small bowl, mix together dried onion soup and beer. Carefully pour over chili sauce. Add water to roasting pan.
  • Bake 3 1/2 hours, uncovered. Check brisket at approximately 2 1/2 hours. If brisket appears to be darkening too much, cover with foil for the last hour of baking.
  • Slice and serve. Brisket can also be sliced and frozen for later use.
