Glazed Cornish Hens Recipe

A sticky sweet glaze over these tender hens is the perfect complement. The meat is tender and moist. Serve these little birds over a bed of wild rice.
Glazed Cornish Hens Recipe

Ingredients
  • 4 Cornish hens, split in half
  • Lawrys salt
  • 1/2 cup butter, melted
  • 1/2 cup orange juice
  • 3/4 cup apricot nectar
  • 1 cup brown sugar
Directions
Place Cornish hens skin-side up in shallow roasting pan. Sprinkle with Lawry's salt. Roast in 350° oven for about 20 minutes.

Combine butter, orange juice, nectar and brown sugar over low heat. Brush glaze over Cornish hens. Bake an additional 30-40 minutes, basting with glaze frequently.

Serve with wild rice sprinkled with cashews.


Wild Rice Side Dish Recipe

Ingredients
  • 1/2 cup wild rice
  • 1/2 cup brown rice
  • 1 can beef consomme
  • 1 can water
  • 1/2 cup celery, chopped
  • 1/4 cup parsley, chopped
  • 1 onion, whole
Directions
Rinse and drain wild rice. Mix rices, consommé, water, celery, and parsley in casserole dish. Place whole onion in center of casserole. Cover and bake at 300° for 2 hours.

Remove onion. Fluff and serve.

Ingredients
  • 1 1/2 pounds carrots
  • 1/3 cup brown sugar, packed
  • 1/2 teaspoon salt
  • 1/2 teaspoon orange peel, grated
  • 2 tablespoons butter or margarine
Directions
Heat 1 inch salted water (1/2 teaspoon salt to 1 cup water) to boiling.

Add carrots. Cover and heat to boiling; cook until tender about 25 minutes. Drain.

In large skillet, cook and stir brown sugar, salt, orange peel and butter until bubbly.

Add carrots; cook over low heat; stirring occasionally about 5 minutes or until carrots are glazed and heated through.


Herb Garlic French Bread Recipe

  • 1 loaf French bread, cut in half lengthwise
  • 1 stick butter, softened
  • 1 teaspoon oregano
  • 2 teaspoons parsley
  • 1/2 teaspoon garlic powder
  • 8 tablespoons Parmesan cheese, grated
Directions
Preheat oven to 300 degrees.

In bowl, combine butter, spices, and cheese. Spread mixture on each half of French bread. Wrap halves in foil. Bake 30 minutes.

Cut into wide slices.

Bread pudding just like grandma used to make. The warm vanilla sauce over the cinnamon-sweet bread pudding will be just what takes it over the edge. Of course, you could always serve it with some vanilla ice cream.

  • 1 loaf white bread (1 lb loaf)
  • 1 1/4 cups sugar
  • 4 eggs
  • 4 cups milk
  • 1 stick oleo, divided
  • cinnamon
  • VANILLA SAUCE:
  • 1 cup sugar
  • 2 tablespoons corn starch
  • 1 cup boiling water
  • 1 stick oleo
  • 1 teaspoon vanilla
Directions
Preheat oven to 350 degrees F. Grease a 9x13 inch pan.

Break bread into pieces and place in prepared pan.

Beat sugar, eggs and milk. Pour over the bread. Push down so bread is wet. Dot with oleo. Sprinkle with cinnamon. Bake for 50 minutes.

For Vanilla Sauce, mix sugar and corn starch. Add to boiling water and cook until thick. Add oleo and vanilla. Pour this over hot bread pudding.
