Ingredients
  • 3 pounds top loin beef roast
  • 1/2 cup brown mustard
  • 2 tablespoons red cooking wine (or table wine)
  • 1 tablespoon garlic, minced
  • 1 teaspoon cracked pepper, leaf rosemary, leaf thyme, ground oregano, ground corriander
  • 1/4 teaspoon freshly ground ginger
Directions
  • Preheat oven to 425° F.
  • Combine the following ingredients in a small bowl: brown mustard, wine, minced garlic, herbs, and freshly ground ginger.  When the mixture has a paste-like consistency, rub it over the entire surface of the roast.
  • On the stovetop, heat 1 tablespoon of oil in a heavy roasting pan. Then add the roast to the pan and brown all sides.
  • When the roast is browned,  place it in a 425° F oven for 10 minutes. Then, turn the oven down to 250° F and continue baking at 30 minutes per pound.

  • 2 pounds potatoes (russets) peeled, cut into large chuncks
  • 1 teaspoon salt
  • water (cover potatoes with water)
  • 3 tablespoons butter, melted (more if desired)
  • salt and pepper to taste
  • 1/2 cup milk, warmed, more for desired consistency
Directions
  • In a large sauce pan, place peeled potatoes and cover with water. Add approximately 1 teaspoon salt. Bring to a boil, then reduce heat to medium and cook until fork tender (about 15 to 20 minutes). Drain.
  • Put drained potatoes in a deep bowl, add melted butter and 1/4 cup of warm milk and mash with an electric beater until smooth. Add more milk and butter for desired consistency.
  • Salt and pepper to taste. Garnish with fresh herbs such as chopped chives, fresh chopped parsley, or add shredded cheddar cheese, if desired.

  • 2 cups broth or stock, ( adjust amount according to need)
  • 1 teaspoon salt (to taste)
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder (to taste)
  • 1/2 teaspoon onion powder (to taste)
  • 1/4 cup cornstarch (for thicker gravy)
  • 1/2 cup cold water
Directions
  • After the meat has finished baking and been removed from the pan, reserve the drippings for the gravy.
  • Place pan on stove over medium high heat, and add stock/broth and water to the drippings, scraping the sides and bottom of the pan to loosen all the drippings. Bring to a low boil, stirring constantly, and cook until the liquid has slightly been reduced.
  • Add seasoning to taste, depending on the flavor already in the drippings. If you desire a thicker gravy, mix cornstarch in cold water, blend, and gradually add to the gravy, whisking all the time to prevent it from forming lumps. Serve warm

  • 8 large oranges
  • 1/2 cup sugar
  • 1 cup orange marmalade
  • 1 cup white grape juice
  • 1/2 cup Sprite (or any other lemon-lime soda)
  • 2 tablespoons cornstarch
  • 1 pinch salt
  • 4 tablespoons slivered almonds - toasted
  • 4 tablespoons coconut - toasted
Directions
  • Toast the almonds and coconut and set aside until needed.
  • Peel and section the oranges; set them aside while you prepare the other ingredients.
  • Pour the sugar and marmalade in a saucepan; cook over medium heat until the sugar is dissolved.
  • Remove this mixture from the heat and add the white grape juice and Sprite. Stir until well blended.
  • Add the cornstarch and salt; stir until the cornstarch is mixed into the marmalade mixture.
  • Put the mixture back over medium heat and bring it to a full boil over. Boil for one minute or until glaze has thickened. Then remove the glaze from the heat.
  • Allow the glaze to cool to room temperature and pour the mixture over the orange segments. Stir until all pieces are evenly coated.
  • Add half of the almonds and half of the coconut to the orange mixture; stir to distribute evenly.
  • Cover the salad with plastic or place in an airtight container; chill in the refrigerator overnight.
  • Just before serving, sprinkle the top with the remaining almonds and coconut.

  • 36 vanilla wafers, divided
  • 8 ounces light cream cheese spread
  • 1/4 cup powdered sugar
  • 8 ounces light whipped topping, thawed

  • 1 teaspoon cocoa powder
Directions
  • Cover bottom of dish with half of the wafers, drizzle 2 tablespoons of the coffee liqueur evenly over the wafers.
  • Mix the cream cheese spread with 3 tablespoons of the coffee liqueur and whisk until well blended. Add powdered sugar, slowly; mix well. Gently stir in whipped topping, mix until well blended.
  • Layer half of the cream cheese mixture over the wafers in the dish; cover with remaining wafers. Drizzle over the wafers the remaining coffee liqueur; top with the remaining cream cheese mixture.
  • Cover and refrigerate overnight. Sprinkle with cocoa and top with your favorite fresh fruit just before serving.
  • Store remaining dessert in refrigerator.

  • Soak poppy seeds in amount of water listed on cake mix for at least 2 hours.
  • Mix together cake mix, poppy seeds with water, egg whites, oil, and pudding mix and beat for 2 minutes.
  • Bake for 40 minutes at 350°.
  • For frosting: cook milk and flour until smooth.
  • Beat together butter, crisco, brown sugar, and maple extract for 5 minutes. Add the milk and flour mixture and beat 5 minutes more.
  • Frost cooled cake and enjoy.

  • 1 clove garlic - crushed through a press
Directions
ASPARAGUS:
  • Steam asparagus in stearmer or in a frying pan filled with cold water to cover asparagus.
  • Simmer until crisp tender, approximately 10 minutes.
  • If using a grill pan, drizzle 2 tablespoons of olive oil on pan, heat to medium, place asparagus in a single layer on pan.
  • Grill until bright green in color, 5 minutes, then turn each spear and grill 2-3 minutes more.
  • They should be bright green and have grill marks in places.
  • Sprinkle with sesame seeds.
  • If steaming or simmering, remove to papertowels to drain, then place directly on a platter when done.
  • Drizzle with white balsamic vinaigrette and sprinkle with two tablespoons lemon zest.

VINAIGRETTE:
  • Place all ingredients in a glass jar and shake well.
  • Store in the refrigerator.

    • 1 package lasagne noodles (8 oz.)
    • 4 cups shredded mozzarella cheese

    Directions
    • Brown the ground beef, onion, and garlic in a skillet on the stovetop over medium heat. Cook until meat is no longer pink. Drain the grease.
    • Add the spaghetti sauce, salt, and oregano to the ground beef and stir until well mixed.
    • Spread 1/4 of the meat sauce on the bottom of an ungreased 5 quart slow cooker.
    • Place one 1/3 of the uncooked lasagna noodles over the meat in the bottom of the crock.
    • Combine all the cheeses together and mix well. Spread 1/3 of the cheese mixture over the noodles.
    • Repeat with two more layers of meat, noodles, and cheese in the order stated above. Finish with the last 1/4 of meat sauce on top.
    • Place the cover on the slow cooker and turn it on high. Cook for 1 hour on high and then turn down to low and cook for an additional 2 to 3 hours.
    • Cook until noodles are tender. Remove the cover, cut into serving size pieces and remove with a spatula.

    • Remove the wilted, discolored and thick outer leaves of the cabbage and cut the remaining head into quarters. Remove the hard inner core from each quarter.
    • Thinly shred the cabbage to produce approximately 8 cups. Shred carrots and set shredded cabbage and carrots aside.
    • Combine sour cream, mayonnaise, vinegar, sugar, salt, and pepper in a large bowl and whisk until well blended.
    • Add shredded cabbage and carrots. Toss until cabbage and carrots are evenly coated.
    • Let the coleslaw stand at room temperature, uncovered, until cabbage is wilted, approximately 25 to 30 minutes. Toss 1 or 2 times while it is standing.
    • After it is wilted, place in the refrigerator to chill.
    • The coleslaw can be made the day before and refrigerated until ready to use.(A sprinkle of paprika perks up the appearance of the slaw.)

    • In a small bowl, combine sugar, flour, cinnamon, nutmeg and lemon zest. Stir until combined and pour over sliced apples. Stir to coat.
    • Roll out crust to fit, just over the edges of pie plate.
    • Place apple mixture on crust. Press apples firmly into crust.
    • Cut butter into 4 pieces and place on top of apples.
    • Roll out second crust so it will cover apples.
    • Crimp the two crusts together. Cut about 4 slits in top of crust.
    • Place foil around outside edges of crust to prevent over-browning.
    • Sprinkle top of crust lightly with cinnamon and sugar if desired.
    • Bake 50-60 minutes.

    • 3 pounds peaches
    • 3 pounds apples

    • 3 teaspoons cinnamon - divided
    • 2/3 cup all purpose flour
    • 1/2 cup brown sugar
    • 3/4 teaspoon salt
    • 5 tablespoons chilled butter, cut into small pieces
    • 3/4 cup old fashioned oatmeal
    • 1/4 cup walnuts coarsely chopped (opt.)
    Directions
    • Preheat oven to 375°F.
    • Peel and core all the fruit, and then slice into 1/2" pieces and put into the baking dish.  Add the lemon juice to the fruit slices, tossing gently to coat.
    • Combine granulated sugar, cornstarch, and 1 tsp. cinnamon, and stir with a whisk. Add cornstarch mixture to sliced fruit, toss well to coat.
    • Lightly spoon flour and level with a knife. Place flour, 2 tsp. cinnamon, brown sugar, and salt in a food processor, and pulse just until combined. Then add chilled butter, and pulse until mixture resembles coarse meal. Add oats and walnuts, pulse 2 times. Finally, sprinkle the flour mixture evenly over sliced fruit.
    • Bake at 350°  for 60 minutes or until fruit is tender and the topping is golden brown.
    • Cool 20 minutes on a wire rack. Serve warm or at room temperature. Great topped with ice cream. (You may use just one or the combination of all 3 fruits. Frozen peach slices may be used instead of fresh.)

    Ingredients
    • 2 pounds fresh, boneless swordfish steak about 1 inch thick - cut into 4 pieces
    • 1 1/2 cups cantaloupe, peeled and diced
    • 1 1/2 cups honeydew, peeled and diced
    • 1 1/2 cups mango, peeled and diced
    • 1/2 cup green bell pepper, chopped fine
    • 1/2 cup red bell pepper, chopped fine
    • 1/3 cup red onion, chopped fine
    • 4 ounces green chilies, diced or 2 jalapeno peppers, seeded and chopped fine
    • 2 tablespoons fresh cilantro, chopped
    • 1 clove garlic, minced or chopped fine
    • 3 tablespoons fresh lime juice - squeezed from lime
    • 1 tablespoon white wine vinegar
    • 1 teaspoon canola oil
    • 1/2 teaspoon ground cumin
    • salt and pepper to taste

    Swordfish - 15 minute preparation
  • Cut whole steak into 4 pieces, approximately 1/2 pound each, or buy individual steaks.
  • If grilling in a pan, preheat pan for 2 minutes. If grilling on open grate, preheat the grill on medium heat for 3 or 4 minutes. Brush/coat pan or grill surface with cooking oil or cooking spray.
  • Place swordfish steaks on cooking surface and grill for approximately 4 to 7 minutes on each side or until steaks are firm to the touch, but still moist, tender, and slightly opaque on the inside at the thickest point.
  • Since temperatures vary for ovens and open grills, check the fish for doneness being careful not to overcook swordfish in order to achieve the best flavor.
    Melon Salsa - 30 minute preparation--prepare ahead of time. 
  • Slice the cantaloupe, honeydew and mango, removing the fruit so it can be diced into 1/4 inch cubes. Chop the green pepper, red pepper, and red onion into fine pieces. If chilies are not diced or seeded, remove the seeds and cut into fine pieces. Chop fresh cilantro and garlic into small pieces, or if desired, mince the garlic instead. Place those ingredients in a small mixing bowl and toss well.
  • In a separate bowl, squeeze 3 tablespoons from one lime and mix with vinegar, oil, and ground cumin. Pour contents into the fruit mixture, mixing all together.
  • Cover and refrigerate for several hours to allow flavors to combine.
  • Serve salsa on top of the grilled swordfish.

    • 1/4 cup white or yellow onion, finely chopped
    • 2 cloves garlic, minced
    • 1 1/2 cups uncooked long-grain white rice
    • 2 1/2 cups vegetable stock (canned)

    • Rinse 1-1/2 cups long-grain white rice in cold water; then soak the rice in cold water for 30 minutes and drain well.
    • In a large saucepan or covered skillet, heat 2 to 3 tablespoons olive oil over medium-high heat. Add 1/4 cup finely chopped white or yellow onions to the pan and saute quickly (1 to 2 minutes).
    • To the onions, add 2 cloves of minced garlic and cook for an additional 30 seconds.
    • Add the 1-1/2 cups of soaked and drained long-grain white rice and stir-fry for about 3 minutes.
    • Pour in 2-1/2 cups water or vegetable stock and bring to a boil.
    • Reduce the heat to low, cover the pan, and simmer for 15 to 18 minutes or until the rice has absorbed the liquid. Do not stir the rice during the cooking time. Leave the pan covered and do not check the rice until the suggested cooking time has elapsed.
    • Serve the rice immediately. Use the rice pilaf as a side dish; as a bed for grilled chicken, turkey, or fish; or as an accompaniment for stir-fried beef or pork dishes.

    • 12 tablespoons sugar, divided
    • 2 cups fat free milk (or lactose free milk)
    • 2 large eggs
    • 1 tablespoon vanilla
    • nutmeg (optional)
    Directions
    • Preheat oven to 325º F.
    • Spray flan baking dishes with vegetable cooking spray. In a heavy sauce pan over medium heat, add 8 tablespoons of sugar. Stir constantly until sugar dissolves and becomes clear. Continue cooking and stirring until sugar turns a light golden brown. Immediately pour sugar mixture into flan dishes, dividing mixture evenly. Tilt baking dishes immediately, coating the bottom of the baking dishes with the liquified sugar.
    • In a medium bowl, whisk milk, eggs, 4 tablespoons of sugar, vanilla, and nutmeg together until smooth. Divide mixture evenly between the baking dishes. Place the filled baking dishes into the 9"x13" pan. Pour hot water into pan to approximately 1" below the top of the flan baking dishes.
    • Bake 45 minutes or until a knife inserted into the center of the custard comes out clean.
    • Remove flan baking dishes from hot water bath and cool on a wire rack.
    • When cooled, chill for 2 hours before serving.
    • To serve, run a knife around the outside edge of the flan and invert the individual flans onto dessert plates.

      Tip: If the flan does not remove easily, dip the flan dish in hot water for a few seconds before inverting onto a serving dish.

    • 4 slices bacon
    • 1/2 cup onion - chopped
    • 3 cloves garlic - chopped
    • 3 bay leaves
    • 2 tablespoons fresh thyme
    • 1 cup red wine
    • 6 cups beef stock of beef boullion
    • 6 large carrots - cut into fourths
    • 3 pounds stuffed rolled round steak
    Directions
    • Cook four slices of bacon. When crisp, remove to a paper towel to drain.
    • In the bacon drippings, place rolled steak and cook for 2-3 minutes on each side to brown. Remove to a plate and set aside.
    • Add onion and cook for 3-5 minutes.
    • Add chopped garlic, bay leaves and thyme. Cook for 2 minutes.
    • Deglaze the pan with red wine. Stir, scraping up the bits on the bottom.
    • Add the beef stock and bring to a boil, then reduce to a simmer.
    • Add the steak and carrots to this sauce.
    • Place in a 350°F oven and cook for 1 1/2 hours, covered.
    • Turn meat half way through cooking.
    • Remove meat from sauce, let rest for 10 minutes.
    • Meanwhile, place pan back on the stove top on medium high heat, boil 1 minute then reduce heat and simmer for 10 minutes to reduce the sauce.
    • Add bacon and serve as a gravy. It will have a consistency of an au jus.

    • 4 squares semi-sweet chocolate

    • 1 pkg (8 oz.) cream cheese, softened

    • 2 cups cool whip, thawed
    • 14 oreo sandwich cookies, crushed into small chunks
    • 1/4 cup chocolate/caramel swirl chips

    • Preheat oven to 350° F.
    • Prepare and bake cake according to package directions. Cool in pans for 5 minutes, then invert onto wire racks to cool completely.
    • Place chocolate squares and butter in small microwaveable bowl. Microwave on high at 30 second intervals until the chocolate and butter are melted. Stir after each 30 second interval. Be sure the chocolate and butter are well mixed; set aside.
    • Beat cream cheese and sugar in large bowl with electric mixter until well blended.
    • Stir in whipped topping and crushed cookies. Stir until well blended.
    • Place 1 cake layer, top side down, on serving platter. Spread with cream cheese mixture evenly over the cake layer.
    • Place the second cake layer, top side up, on top of the cream cheese layer. Push down slightly to prevent the cake top from sliding.
    • Take swirl chips and press them slightly into the cream cheese mixture all the way around the cake. Just enough to hold them in place but still be able to see them.
    • Top with the chocolate glaze mixture, spreading evenly over the top and allowing it to drizzle down the sides.
    • Store in refrigerator.
