  • 2 1/2 pounds top round beef roast
  • 1/4 cup olive oil
  • 2 cups beef broth
  • RUB:
  • 1 tablespoon pepper
  • 1 tablespoon barbecue seasoning powder
  • 1 tablespoon rosemary
  • 1 teaspoon garlic salt
  • 1/4 cup olive oil
Directions
  • Pour 1/4 cup of oil in a roasting pan or dutch oven.
  • Heat on the stove on medium.
  • Rub the meat all over with the rub mixture. Place roast in the oil and brown on both sides.
  • Heat oven to 400 degrees F. Place the dutch oven or roasting pan in the oven, uncovered.
  • Roast for 1/2 hour, turn the roast over and lower the heat to 350 degrees F.
  • Roast for another 20 minutes or until the internal temperature reaches 130 degrees F. for rare, 145 degrees F. for medium, etc.
  • Remove from the oven and allow it to rest for 15 minutes before carving.
  • After the roast has been removed, place the roaster or dutch oven on top of the stove over medium heat.
  • Add two cups of broth, stir to combine with the drippings.
  • Simmer for 5 minutes. Pour through a strainer and serve warm with the meat.

  • 2 pounds potatoes (russets) peeled, cut into large chuncks
  • 1 teaspoon salt
  • water (cover potatoes with water)
  • 3 tablespoons butter, melted (more if desired)
  • salt and pepper to taste
  • 1/2 cup milk, warmed, more for desired consistency
Directions
  • In a large sauce pan, place peeled potatoes and cover with water. Add approximately 1 teaspoon salt. Bring to a boil, then reduce heat to medium and cook until fork tender (about 15 to 20 minutes). Drain.
  • Put drained potatoes in a deep bowl, add melted butter and 1/4 cup of warm milk and mash with an electric beater until smooth. Add more milk and butter for desired consistency.
  • Salt and pepper to taste. Garnish with fresh herbs such as chopped chives, fresh chopped parsley, or add shredded cheddar cheese, if desired.

  • 1/3 cup sour cream
  • 1/4 teaspoon black pepper

  • 16 ounces (1 bag) frozen mixed vegetables with the majority being green beans
  • 8 ounces (1/2 bag) frozen pearl onions
  • 1/2 cup shredded swiss cheese
  • 1 can sliced water chestnuts
  • TOPPING
  • 4 tablespoons butter - melted
  • 1/2 cup seasoned bread crumbs
  • 1/2 cup shredded swiss cheese
Directions
  • Stir soup, sour cream, pepper, salt, frozen vegetables, onions, swiss cheese and water chestnuts together in a medium bowl. (Vegetables do not need to be thawed but can be.)
  • Pour into a 2 quart casserole dish.
  • Bake at 350° for 40 minutes or until vegetables are tender.
  • Stir halfway through baking.
  • Mix melted butter, bread crumbs and swiss cheese together in a small bowl for topping.
  • Sprinkle over vegetables and bake for another 5-10 minutes or just until crumbs start to brown.
  • Serve hot.

  • 1 1/2 cups vegetable oil
  • 2 cups sugar
  • 4 eggs
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 1/2 teaspoons cinnamon
  • 2 1/2 teaspoons vanilla
  • 3 cups grated carrots
  • FROSTING:
  • 3 ounces cream cheese
  • 1/4 cup butter or margarine
  • 2 cups powdered sugar
  • 2 teaspoons vanilla
Directions
CAKE:
  • Grease and flour pans.  Preheat oven to 325°F.
  • Combine oil, sugar, and eggs and beat well.
  • Sift the flour, soda, salt, and cinnamon together. Add to the sugar mixture and beat for 2 minutes. Add vanilla and blend well.
  • Stir in grated carrots until evenly distributed. Do not over-stir. Pour into prepared pans.
  • Bake for 45 minutes or until done. Check for doneness by poking with a toothpick. Toothpick should come out clean.
FROSTING:
  • Cream cheese and butter or margarine should be slightly soft, but not too soft. Cream butter or margarine and cream cheese together.
  • Add powdered sugar and vanilla and beat until well blended. Add more powdered sugar if you would like the frosting to be a little thicker.
  • Frost cake when it is completely cooled. Frosting may be stored in the refrigerator 1 to 2 weeks. Remove from refrigerator a little while before using.

  • 1 pound ground beef
  • 1/4 pound pepperoni - chopped
  • 1/4 cup pizza sauce - extra to use as a condiment
  • 1 clove garlic - minced
  • 1/4 cup onion - minced
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
  • 4 slices mozzarella cheese or provolone cheese
  • 1 tomato - sliced
  • romaine or iceberg lettuce
  • 4 crusty rolls - sliced
Directions
  • In a mixing bowl, combine the ground beef, pepperoni, pizza sauce, Italian seasoning, garlic and onions.
  • Mix well to combine all of the ingredients.
  • Divide into four equal parts and pat into burgers.
  • Salt and pepper each burger to taste.
  • Fry the burgers in a large skillet or they can easily be grilled. Cook approximately 6 minutes on each side or until they reach the desired doneness.
  • Place a slice of mozzarella or provolone cheese on each right before they are finished cooking. Allow the cheese to completely melt over the burger.
  • Spread a tablespoon of pizza sauce on each bun. Place a burger on top with lettuce and tomato.

Penne Pasta Salad Recipe

Penne Pasta Salad Recipe

Container: large pasta pot, large bowl, small bowl or small jar with lid (for mixing packaged salad dressing)
Ingredients
  • 16 ounces penne pasta - cooked and drained
  • 8 ounces feta cheese - crumbled (use any flavor of feta - we like tomato basil for the flavor and color)
  • 2 ripe tomatoes, large - chopped
  • 1/4 cup capers, drained
  • 1/4 cup parsley - chopped
  • 3 ounces package of sun dried tomatoes (reconstitute the tomatoes and chop)
  • 1 package zesty Italian dressing - prepare according to the package directions
Directions
  • Cook the pasta according to the package directions; drain and place into a large bowl.
  • While the pasta is cooking, prepare the salad dressing according to the package directions and pour over the warm, drained pasta. Let the pasta cool before adding the remaining ingredients.
  • Add the drained capers, crumbled feta cheese, chopped parsley, and chopped reconstituted sun dried tomatoes. Refrigerate for 4 to 6 hours so that the flavors of the ingredients blend together.
  • Just before serving, add the tomatoes.
Substitution: Instead of using capers, you can use chopped Kalamata olives.

Optional: To use this salad as an entrée, add one chicken breast per person.

Optional: Use cherry tomatoes instead of chopped large tomatoes.

Note: This recipe doubles and triples easily.

Slow Cooker Chicken and Biscuits Recipe

  • 2 1/2 pounds boneless, skinless chicken breast
  • 2 cans (10.75 oz. each) cream of chicken soup
  • 2 tablespoons butter or margarine
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 1 small onion, minced or 2 tsp. onion powder
  • 3/4 cup chicken broth or water
  • 2 packages (10 oz. each) refrigerated biscuit dough
Directions
  • Place the chicken breast on the bottom of a 5 or 6-quart slow cooker. Top with soup, butter, vegetables, and onion.
  • Pour the chicken broth over the soup mixture. The chicken should be covered; if not, add more broth.
  • Place the cover on the slow cooker and turn on high. Cook on high for 5 to 6 hours.
  • Approximately 1 hour before serving, remove the cover and pull the chicken apart in small pieces or shred.
  • Tear the refrigerator biscuit dough into pieces and place it on top of the chicken mixture in the slow cooker.
  • Replace the cover and cook another hour or until the biscuits are done all the way through.
  • To serve, spoon the chicken and biscuits onto plates directly from the slow cooker.

  • 1 1/4 cups butter, softened
  • 3 1/4 cups all purpose flour
  • 1 cup cake flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups granulated sugar
  • 1 1/4 cups brown sugar, packed
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 20 oz. bag of semi sweet chocolate chips or chunks
Directions
  • Preheat oven to 375° F.
  • In a large bowl, combine both of the flours, baking powder, baking soda, and salt; set aside.
  • In large mixing bowl, cream the butter and sugars. Add sugar a little at a time making sure that it is incorporated before adding more. Add the vanilla extract. Slowly add in the flour mixture, a little at a time, until it is all combined. Mix in the chocolate chips.
  • Spray cookie sheet or stone with non stick cooking spray. Drop approximately nine dollops on the sheet and bake 8-9 minutes, or until cookies are slightly brown. Remove from the oven and let the cookies rest on the sheets for approximately 2 minutes. Remove cookies from sheets and place on cooling racks. Makes approximately 3-4 dozen cookies.

  • 1 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1 cup processed cheese - cubed
  • 12 ounces refrigerated biscuits
  • 3 tablespoons butter or margarine
  • 1/3 cup cornmeal
Directions
  • Preheat oven to 375° F.
  • In a large skillet, over medium heat, brown the ground beef and onion. Drain and return the meat mixture to the skillet.
  • Add in the beans, corn, soup, milk, chili powder and salt. Bring to a boil.
  • Turn the heat to low and add the cubed cheese.
  • Stir until melted.
  • Spoon into a greased 2 1/2 quart baking dish.
  • Bake, uncovered, for 10 minutes.
  • Meanwhile, dip the biscuits into the melted margarine, turning to coat each side.
  • Roll each biscuit into the cornmeal.
  • Place the biscuits on top of the bubbling meat mixture.
  • Return to the oven and bake for another 10-15 minutes or until the biscuits are lightly browned and cooked through.

  • 1 egg

  • 1 cup flour
  • 1 cup oatmeal
  • 1 package milk chocolate or semi-sweet chips, 12 oz.
Directions
  • Preheat oven to 350° F.
  • Lightly grease the baking pan and set aside.
  • Mix the butter, sugar and brown sugar together with a mixer until creamy.
  • Add the egg, peanut butter, soda, salt, vanilla, and flour. Blend until all ingredients are evenly distributed.
  • Add the oatmeal and mix just until it is evenly distributed.
  • Scrape the mixture into the greased baking pan and pat the bars until they are spread evenly into the bottom.
  • Place in the preheated oven and bake for 20 to 25 minutes.
  • Remove from the oven and sprinkle chocolate chips over the bars while they are still hot.
  • Allow the chips to sit for 5 to 10 minutes and then spread evenly over the top of the bars.
  • Allow to cool and then cut into bars.

  • 1 onion - medium, diced

  • 1 rosemary sprig, stemmed and chopped
  • 3 cups chicken broth - canned or homemade
  • 29 ounces tomato sauce
  • 29 ounces tomato - diced, with oregano, basil and garlic
  • 2 dashes of favorite hot sauce, more if desired
  • 1/4 cup honey
  • 1 tablespoon dill weed, dried
  • 1/2 teaspoon pepper
  • 1 teaspoon chili powder
Directions
  • In dutch oven, melt 5 1/2 tablespoons butter over medium heat. When melted, whisk in flour, continually whisking until smooth. Remove from heat.
  • In small skillet, melt the rest of the butter. Sauté the onion and garlic over medium heat for 2-3 minutes. Add the fresh basil and chopped rosemary. Sauté 2-3 more minutes.
  • Return dutch oven with flour mixture to medium heat on stove. Add in the onion mixture. Stir to combine. Slowly add chicken broth, 1 cup at a time, stirring continuously and allowing sauce to thicken slightly.
  • Continue adding broth until all is incorporated and thickened.
  • Begin adding the tomato sauce and diced tomatoes, stirring continuously, allowing mixture to thicken.
  • Season with hot sauce, honey, dill weed, pepper, chili powder. Stir to combine.
  • Serve hot with Italian popcorn or croutons.
NOTE: Can be made ahead; just reheat on low heat, stirring frequently.

  • 3 cups chicken, cooked and cubed
  • 30 ounces black beans, drained
  • 2 1/2 cups tortilla chips, lightly crushed
  • 4 cups cheddar cheese, shredded (or use a blend)
  • 2 cups mozzarella cheese, shredded (or use a blend)
  • 4 large 11 inch diameter flour tortillas, sliced
  • 3 cups salsa - any flavor
  • 4 ounces can of green chilies, chopped (optional)
Directions
  • Preheat oven to 325° F.
  • Lightly spray baking dish with no-stick cooking spray.
  • Cut 11 inch diameter flour tortillas into 1/2 inch wide strips.
  • Spread all the tortilla chips over the bottom of the dish.
  • Layer in the following order: half of black beans (15 oz), 2 cups of cheese, and half of the flour tortilla strips. Then add the chicken and pour the 3 cups of salsa over the it.
  • Next, layer in the following order: 2 cups of cheese, remaining flour tortilla strips, and remaining (15 oz) of black beans.
  • Spread 2 cups of cheese over top.
  • Cover with foil* and bake 50 minutes.
  • Uncover and bake an additional 10 minutes.
  • Serve with extra salsa if desired.
*Spray foil with cooking spray to prevent cheese from sticking.

  • 4 cups cinnamon toast cereal
  • 6 scoops vanilla ice cream (1/2 cup each)
  • oil for deep fat fryer
Directions
  • Crush cereal into very small pieces and place onto a cookie sheet. Using your hands, roll approximately 1 cup of ice cream shaped like a ball through the cereal. Make sure the ice cream is completely coated with the cereal. Place ice cream onto a jelly roll pan. Cover with plastic wrap and freeze for 2 hours, or until firm. (They can also be frozen overnight ,if needed.)
  • Heat oil in deep fat fryer. With a metal slotted spoon, lower each ice cream ball individually into the hot grease for approximately 5-10 seconds. You don't want the ice cream to melt, but do want the cereal to turn light brown.
  • Place into serving bowls. Top with non-dairy whipped topping and a cherry or any other sundae toppings that you desire.

Directions
  • In a large bowl, combine the lean ground beef, ground pork, chopped onions, garlic, seasoning salt, Worcestershire sauce, bread crumbs, mustard, salt and pepper and eggs. It is often easiest to use your hands to blend the ingredients together.
  • Stir until well blended.
  • Pack the mixture into a greased, 9 x 5 loaf pan and smooth the surface. Spread the ketchup on the top of the meatloaf.
  • Bake in a preheated, 400º degree oven for approximately 1 hour. The internal portion of the meatloaf must be cooked to a minimum temperature of 160º as indicated by a meat thermometer.
