Mexican Grilled Chicken Recipe

This was inspired by combining a few of my family's favorite meals, Chicken Parmigiana and chicken quesadillas.

  • 1 package Fajita Mix
  • 2 chicken breasts
  • 1 cup fresh salsa
  • 1 cup Mexican style shredded cheese
  • Oil
  • Fillet the two chicken breasts, so that you have (4) pieces.
  • Coat the pieces of chicken with oil; then sprinkle the fajita mix evenly on the chicken breasts. Rub it in evenly.
  • Optional - place the seasoned chicken in a plastic bag and let it sit in the refrigerator for a few hours to marinate.
  • Cook the chicken on the grill.
  • Move to top rack temporarily and put a piece of foil on the main rack of the grill and transfer grilled chicken onto it. (This helps keep salsa and cheese from falling into the grill.)
  • Generously cover each piece of chicken with salsa and sprinkle desired amount of cheese of top.
  • Close cover and leave on grill until cheese is melted.
  • Remove and serve.
