Delectable Cheese Muffins Recipe

  • 2 cups (500ml) whole wheat or all-purpose flour
  • 1 tablespoon (15ml) baking powder
  • 1 teaspoon (10 ml) granulated sugar
  • 3/4 teaspoon salt
  • 1 1/2 cups Cheddar cheese, shredded ( or your choice)
  • 1/2 cup cooked bacon bits
  • 1 cup broth or milk
  • 3/4 cup canola oil
  • 2 large eggs
  • 3/4 cup chopped shallots

  • Preheat oven to 400 degrees F. (200 degrees C.). Use muffin pan for 12 muffins.
  • Sift flour, baking powder, sugar, and salt in large bowl. Add cheese and bacon, mix to combine. Whisk broth or milk, oil, eggs, and shallots in separate bowl; add to dry ingredients. Stir until just combined.
  • Fill 12 muffin tins evenly. Bake 20 minutes or until a tester inserted in center comes out clean. Remove from oven and sprinkle with grated cheese on top, if desired.
