Kentucky Beer Cheese Recipe

The story goes that beer cheese was invented in Kentucky. It has been popular around the state for a number of years. Here is a recipe I received while attending a cooking class. It's a wonderful appetizer.

Directions
Allow cheese to come to room temperature (about an hour). Pour beer in a glass and allow it to go flat. Combine all ingredients, except beer, in a bowl or food processor. Beat with an electric mixer or process. Slowly add beer and mix until cheese is very smooth. Refrigerate in a covered container. Remove from refrigerator 30 minutes before serving. You may have to whisk it a little to blend it again.
Ingredients
- 1 pound cheddar cheese - fine
- 1 pound mild cheddar - fine
- 1 clove minced Garlic
- 1 teaspoon salt
- 12 ounces bottle of beer
- 3 tablespoons Worcestershire sauce
- drop hot sauce
- 1 teaspoon dry mustard
