Directions

4 each large peaches, diced
-
1/2 cup diced red onion
-
1/2 cup diced roasted red pepper
-
2 tablespoons fresh minced basil
-
tablespoon fresh grapefruit juice
-
1 teaspoon olive oil
-
1/4 teaspoon salt
-
1/4 teaspoon fresh cracked black pepper
-
1 each minced serano chili (optional)
Combine peaches, onion, red pepper, basil, salt and pepper (and optional chili) into a large bowl. Drizzle grapefruit juice and olive oil over the top and stir to combine. Allow 20-30 minutes in refrigerator for flavors to combine. Enjoy!
