Turkey Rice Casserole Recipe

This is an excellent dish if you are in a hurry and it is quite healthy.

  • 1 1/2 cups instant rice
  • 1 1/2 cups cream of chicken soup and water
  • 1 cup peas and carrots (frozen or fresh)
  • 1 1/2 cups chunks of cooked turkey
Combine all ingredients and pour into a casserole dish. bake at 350 degrees for about 1/2 hour or until rice is cooked.

"I tried this recipe yesterday and was a bit disappointed. It says you can use fresh carrots instead of frozen. The problem is that with fresh carrots it does not cook in 30 mins as the recipe claims. I left mine in for an hour and the carrots where still only partially cooked. I suggest if you have to use fresh vegetables then try steaming them before mixing other ingredients."
