Herb Stuffed Cornish Hens With Marmalade Recipe

Herb stuffed cornish hen, stuffed with herbs and slow cooked with vegetables in a parchment bag.
Directions
Cross two pieces of parchment paper over each other. This will become your bag later.
After rinsing hens inside and out with cool water, stuff each hen with herbs. Place hens on parchment paper.
Lightly season the outside with salt and pepper. Mix together the orange marmalade and white wine to create a thick glaze. Spoon the glaze on top of the hens. Add fresh vegetables such as potatoes, onions and whole cloves of garlic to the parchment bag.
Drizzle everything with olive oil.
Fold one piece of parchment over the hen, and then fold the second piece over and roll the top. This is your parchment bag.
Place both parchment bags on a baking sheet.
Bake at 350 degrees for 1 1/2 to 2 hours.

4 sprigs fresh sage

1 teaspoon kosher salt

1 teaspoon fresh ground black pepper

1 teaspoon olive oil

3 tablespoons orange marmalade

1 tablespoon white wine
-
4 each parchment paper, baking sheet size
