  • 3/4 cup unsalted butter
  • 1/4 cup vegetable oil
  • 2 1/2 cups ripe bananas, mashed
  • 2 1/2 cups sugar
  • 4 large eggs
  • 3/4 cup buttermilk
  • 3 cups plain flour
  • 1 1/2 teaspoons baking soda
  • 1 pinch salt
  • 2 teaspoons vanilla
  • 1/2 cup chopped nuts (I prefer pecans or walnuts) (optional)
  • 1/2 cup semi sweet chocolate chips (optional)

Preheat oven to 325 degrees F. Grease and flour 2 loaf pans.

Combine margarine, oil, bananas, and sugar.

Add eggs, one at a time, beating well.

In a separate bowl, sift flour, salt, and soda.

Add dry ingredients alternately with buttermilk to batter. Mix well.

Stir in nuts and vanilla.

Pour into prepared loaf pans. Bake for 75-80 minutes or until pick inserted in center comes out clean (22 minutes for mini loaves.) Freezes well and makes a nice gift!

VARIATION: Mix 1 1/2 teaspoons sugar and 1 1/2 teaspoons cinnamon together and sprinkle over top of loaves.

"This IS really good banana bread, SO moist. I didn't have buttermilk, so I made my own with milk and 1 T lemon juice, letting it sit for 5 minutes. I left out the nuts and made one with chocolate chips and one without."
