Grilled Steelhead Trout with Pesto

This recipe is a simple way to prepare steelhead trout (or salmon). Season both sides of the fish with salt and pepper. Place the filet in the center of a large piece of aluminum foil. Spread the pre-prepared pesto liberally over the top side of the filet. Use a second piece of foil to cover the fish then fold over the sides and crimp to create a packet for the fish to cook in. Place the foil packet gently on a hot (but not flaming) grill. Cook for 12 to 15 minutes. There is no need to turn the fish. Remove from grill and allow fish to sit for 2 to 5 minutes before opening the foil packet. You can serve directly from the foil or transfer the fish to a pretty platter for serving.
