Omelet with Chives Recipe

  • 3 eggs
  • 1 teaspoon butter room temperature
  • 1/2 teaspoon chives chopped
Crack eggs into bowl, add salt, and blend. Heat a 10-inch pan medium-high. Add butter. Pour eggs into center of pan and stir for 5 seconds. As soon as a semi-solid mass forms, lift pan and move around until the excess liquid pours off into pan. Using your spatula move around the edge of the egg mixture to help shape it.

Sprinkle with chives.
