OVEN POT ROAST OF BEEF Recipe

Ingredients
  • 2 eye bottom round beef (4 lb )
  • 1/4 cup soy sauce
  • 1 cup orange or pineapple juice
  • 2 tablespoons wine vinegar
  • Salt and pepper to taste
Directions
Place beef in oblong baking dish or pan. Combine ingredients and pour over meat. Cover and let stand overnight, basting or turning meat several times. Next day, remove meat from marinade and place in oblong baking pan. Sprinkle with salt and pepper. Roast in 350° oven until meat begins to brown (30-40 minutes). Pour on marinade. Cover and roast until meat is tender - about 2-1/2 to 3 hours. Thicken pan gravy if desired.
