Irish Casserole Recipe

  • 1 can sauerkraut, drained (27 ounce can)
  • 4 tablespoons Thousand Island dressing
  • 2 tablespoons Butter, divided
  • 3 packages corn beef, shredded (3 ounce pkg)
  • 2 cups Swiss cheese
  • 2 cups rye bread crumbs
  • 1/4 teaspoon caraway seeds
Spread sauerkraut in a 9X12 baking dish. Spread with salad dressing and dot with 1 tablespoon butter and caraway seeds. Top with corned beef and cheese. Spread crumbs on top. Dot with remaining butter. Bake at 425 for 30 minutes.
