Individual packets that includes chicken, potatoes and any vegetables you like. Perfect for your pickier eaters. These are great in the summer when you use the grill and don't heat up the house.

Ingredients
  • 8 boneless, skinless chicken breasts
  • 1/2 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon tarragon (optional)
  • 6 potatoes, sliced
  • 2 cups carrots, sliced

Spray foil with cooking spray.

On each piece of foil, place a chicken breast, potatoes and carrots. Sprinkle each with seasoning.

Create a packet with the foil sealing down the middle, and then at ends.

Bake at 400° for 30 minutes or on the grill for 45 minutes.

Be careful opening as the steam escaping is very hot. Serve with butter, salt & pepper.
