Crispy Flounder Filets Recipe

  • 3/4 cup crushed cornflakes
  • 1 teaspoon dried oregano
  • Salt and pepper
  • 1/8 teaspoon cayenne pepper
  • 2 tablespoons flour
  • 2 egg whites
  • 1 tablespoon Dijon mustard
  • 4 filets flounder
Preheat oven to 450°. Grease a baking sheet and set aside. In a shallow dish, combine cornflake crumbs, dried oregano, 1/2 teaspoon salt, 1/2 teaspoon pepper and cayenne pepper. In a separate shallow dish, place flour. In a medium mixing bowl, beat egg whites until stiff peaks form. Fold in Dijon mustard. Season each filet with salt and pepper and dip filets into flour, coating each side. Shake off excess flour and spread mustard mixture over both sides of floured filets. Dip filets into crumb mixture, coating well. Place coated fish on prepared baking sheet. Bake in oven for 8 minutes or until fish is crispy and cooked throughout. Makes 4 servings.
