Baked Fish Au Gratin Recipe

  • 2 - 3 lbs fish fillets, perch or whitefish
  • 1/2 cup butter
  • 1 1/2 cups milk
  • 1 teaspoon Salt
  • 1/4 teaspoon nutmeg
  • 3/4 teaspoon dry mustard
  • 1 1/4 teaspoons lemon juice
  • 4 ounces shredded cheddar cheese
  • 1/4 cup flour
Place fish in a 13X9X2 baking pan. Melt butter in saucepan over low heat, add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually stir in milk, cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt, nutmeg and dry mustard. Add lemon juice and cheese, stirring until cheese is melted. Pour over fish and bake in a 350° oven, uncovered for 35-45 minutes or until fish is flaky.
