Cheese Topped Tilapia Fillets Recipe

Ingredients
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons butter, room temperature
  • 1 1/2 tablespoons mayonnaise or plain yogurt
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried basil
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon salt
  • 1 package frozen tilapia fillets (or four pieces of fish from meat department)
Directions
Preheat the oven broiler. Line a baking sheet with aluminum foil and coat lightly with cooking spray. In a bowl mix together the 7 ingredients listed above. Place fillets on the lined baking sheet and broil three minutes. Carefully turn the fillets and continue broiling another three minutes. Remove the tilapia from the oven and coat each piece with the creamy cheese mixture. Broil for two minutes until the topping is browned and the fish flakes easily with a fork. The topping browns very quickly and will burn if not watched. This serves four. You can also use salmon or other fish.
