Ground Beef Enchiladas Recipe

  • 1 1/2 pounds ground beef
  • Pork and beans
  • 1 onion (small)
  • 1 teaspoon chili powder
  • 1/2 cup oleo
  • 1/2 cup flour
  • 1 cup tomato juice
  • 4 cups water
  • 3 tablespoons chili powder
  • Salt
  • Pepper
  • Grated cheese
  • Tortillas
Brown meat; add beans, onion and 1 tsp. chili powder. Melt oleo in pan; add flour as for white sauce. Stir in tomato juice, water, and second amount of chili powder. Salt and pepper meat mixture to taste. Dip each tortilla into sauce which should be of gravy consistency. Fill with meat mixture. Roll up; place on cookie sheet. Sprinkle cheese over top of enchiladas.

If there is leftover sauce, I usually just pour it over the top of the enchiladas before adding the cheese. Bake at 350 until cheese melts.
