Breakfast Frittata 2 Recipe

  • 1 package frozen hash browns
  • 1 pound lean sausage, cooked
  • 6 eggs
  • 1 cup milk
  • salt and pepper to taste
  • 1 pound grated cheese
  • 4 strips bacon, cooked till crisp
Butter a 9 x 13 pan. Using frozen hash browns, fill bottom of pan with potatoes up to 3/4" deep in bottom of pan. Crumble the cooked sausage over the potatoes. In a bowl, beat the 6 eggs with the milk and add salt and pepper. Pour this over the sausage and refrigerate overnight. Next morning, crumble the grated cheese all over the top of the frittata. Bake at 350° for 40 minutes. Cooked crisp bacon can then be crumbled and sprinkled over the top when it comes out of the oven.
