Oven Crisp Chicken Recipe

  • 1 broiler-fryer chicken, cut-up
  • 1 cup Bisquick
  • 2 teaspoons salt
  • 2 teaspoons paprika
  • 1/4 teaspoon pepper
  • 1/2 cup shortening
Mix Bisquick and seasonings in a paper bag. Heat oven to 425°. Melt shortening in a 9 x 13 pan in oven. Shake chicken in bag, a few pieces at a time, to coat thoroughly. Lay chicken, skin side down, in single layer in hot shortening. Bake 45 minutes. Turn pieces and bake another 15 minutes. This is much like fried chicken, but no mess.
