Tuna Wedges (Microwave Cooking) Recipe

  • 2 Eggs
  • 1 1/2 cups cooked rice
  • 6 green onions, finely chopped
  • 2 cans solid pack tuna
  • 1 stick butter (1/2 cup stick)
  • 1/4 teaspoon Thyme
  • 1 cup fine dry bread crumbs
In large mixing bowl beat eggs with fork. Add rice, onions and undrained tuna. Mix well. In small glass bowl place butter. Microwave at high 1 minute, until melted. Add to tuna along with thyme and crumbs. Mix well. Spread mixture evenly in lightly greased 9 in pie plate. Cover with wax paper. Microwave on high 9-11 minutes, rotating dish 1/2 turn after 5 min. Can add shredded cheese on top. Serve in wedges. Makes about 6 servings.
