Stuffed Zucchini/ Vegetables Recipe

  • 6 zucchini, halved lengthwise. (or 6 medium tomatoes or 1 large eggplant, scooped) (medium)
  • 1/2 pound hot Italian sausage
  • 1 onion, chopped, appx. 1/4 cup (small)
  • 1 clove garlic, crushed
  • 1/3 cup d Italian bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 pound mozzarella, shredded
Cook zucchini in boiling salted water in a large skilled for 10 minutes. rain, scoop out insides, leaving a 1/4 inch shell. Mash insides, drain well. Put shells in shallow baking dish.

Remove casing from sausage. Break up meat. Cook sausage in same skilled for 5 minutes. Add onion, and garlic. Saut until tender, appx. 3 min. Stir in mashed zucchini and bread crumbs. Spoon into shells, sprinkle with cheese. Bake at 350 for 30 minutes.
