Spinach Ball Appetizers Recipe

  • 2 ounces pkgs. frozen chopped spinach
  • 1 onion, diced (large)
  • 1/2 cup Parmesan cheese
  • 1 1/2 teaspoons thyme
  • Salt and pepper to taste
  • 2 cups herb stuffing or seasoned bread crumbs
  • 4 eggs
  • 3/4 butter, melted
  • 1 clove garlic, minced
Cook spinach; drain very well. Mix all ingredients thoroughly and chill 2 hours or longer. Roll into 1" balls and bake 30 minutes at 300. To freeze, place uncooked balls on cookie sheet; when frozen, put in plastic bag or other container. Thaw before baking.
