Cajun Chicken or Prawns Recipe

  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 red bell pepper, sliced (1/4 inch x 2")
  • 1 yellow or orange bell pepper (1/4 inch x 2")
  • 1 sweet onion, chopped (large)
  • 1/2 pound fresh mushrooms, sliced
  • 1 pound cooked chicken breast, sliced (or prawns)
  • 1 diced organic tomatoes (S & W inch puree (14.5 ounce )
  • 1 bottle "Cajun Power" garlic sauce (8 ounce bottle)
In large sauté pan, heat oil and butter to medium high heat. Sauté peppers and onions for a few minutes, but keep crisp-not limp. Add mushrooms and cooked prawns (or chicken). Stir in tomatoes and Cajun sauce. Heat through and serve over rice of choice. **Chicken or prawns: Pre-cook: Grill chicken or prawns ahead of time. You may also stir fry or bake, but the grilled version tastes bests.
