  • 1 can enchilada sauce (large can)
  • 2 cans tomato sauce (small cans)
  • 1 pound ground beef
  • 1 can refried beans
  • 1/2 cup onions, chopped
  • 1 package flour tortillas
  • 3 cups cheddar cheese

Preheat oven to 350 degrees F. Spray 9x13 inch pan with cooking spray.

Mix enchilada sauce and tomato sauce together; set aside.

Brown ground beef; drain.

Mix beef, refried beans and 4 tablespoons enchilada sauce mixture.

Spoon beef mixture into tortilla along with onions and cheddar cheese. Roll tortilla up and place seam side down in prepared pan. Repeat with all tortillas.

Pour remaining enchilada sauce on top of rolled tortilla shells. Sprinkle with remaining Cheddar Cheese. Bake for 20-30 minutes.

Beef and refried beans are combined to make the perfect filling for these enchiladas. Top these off with lettuce and sour cream.
