Vegetarian Burrito Stack Recipe

Ingredients
  • 1 can re-fried beans (8 ounce can)
  • 1/4 cup mild or hot taco sauce
  • 1/4 cup Salad Oil
  • 4 - 8 inch flour tortillas
  • 1/4 head lettuce, shredded (medium head)
  • 8 ounces Shredded Cheese
  • 2 tomatoes cut into bite size pieces (large)
Directions
In small saucepan over medium-low heat, heat re-fried beans & taco sauce until blended & heated through, stirring occasionally. Meanwhile in a 10" skillet over medium heat, in hot salad oil fry 1 tortilla at a time, about 30 seconds on each side until lightly browned & blistered. With tongs, remove & drain on paper towels. On plate, place 1 tortilla; top with 1/4 bean mixture, 1/4 lettuce & 1/4 cheese. Repeat layers 3 times. Arrange tomatoes around stack. Cut stack into wedges to serve. Makes 6 main dish servings.
