Salmon Fillets with Potato Chip Crust Recipe

Ingredients
  • 3/4 cup crushed kettle style potato chips
  • 1/4 cup bread crumbs
  • 2 teaspoons dried dill
  • 4 filets salmon (6 ounce filets)
  • 1 teaspoon oil
  • 1 1/2 teaspoons Dijon mustard
Directions
Place oven rack in top position close to broiler. Preheat broiler to high. Line a rimmed baking sheet with aluminum foil. Combine chips, bread crumbs, and dill in a small bowl. Place salmon fillets on baking sheet. Brush with oil, and sprinkle with salt and pepper. Broil on upper rack until surface begins to brown 7-9 minutes. Remove from oven and spread mustard over fish. Spoon potato chip mixture onto fillets, press it into fish with back of spoon. Return pan to lower oven rack and broil until crust is golden brown, in 30 seconds to 1 minute. Serve immediately.
