Italian Chicken Dinner Recipe

Ingredients
  • 1 package chicken legs (small package)
  • 1 package chicken thighs (small package)
  • 2 -3 potatoes, peeled and cut inch quarters
  • 2 carrots, peeled and cut into 2 - 3 inch pieces
  • 1/3 cup olive oil, more or less as desired.
  • 1/2 cup chopped fresh parsley or 2 T dried parsley
  • 4 fresh cloves garlic, sliced very thin or minced.
  • Salt & Pepper to taste
Directions
Wash chicken and take off skin. Sprinkle half of the olive oil In large roasting pan, lay chicken in pan; add potatoes and carrots. Sprinkle the remaining olive oil over everything in the pan. Add the garlic to the top of the chicken. Use salt and pepper as desired. Sprinkle parsley over top of chicken and vegetables. Cover and roast at 350° for 2 hours. After first hour of roasting, add approximately 1/2 C. water to keep the chicken moist.

Serves 4-5 people.
