  • 4 Cornish hens (rinsed and patted dry)
  • 2 tablespoons olive oil
  • 2 tablespoons Lemon Juice
  • 2 tablespoons honey
  • 2 teaspoons fresh thyme, chopped
  • 2 teaspoons fresh oregano, chopped
  • 1/2 teaspoon Salt
  • 1/8 teaspoon black pepper

Season hens with salt and pepper. Place hens in pan, skin side down. Brush with half of honey mixture. Bake at 400° for 30 minutes. Remove pan and turn over hens. Brush with remaining honey mixture. Cook for 20 to 30 minutes or until internal temperature of hen reaches 180°. Transfer to plate. Drain drippings from pan skimming off the fat. Pour into a gravy boat.
