TRIPLE DECKER STRAWBERRY CHICKEN CLUB SANDWICH Recipe

Ingredients
  • 12 ounces thick cut bacon (I use precooked)
  • 1 1/2 pounds skinless, boneless chicken breast
  • 1 avocado, halved and pitted
  • 2 tablespoons fresh lemon juice
  • 1/3 cup mayonnaise
  • 12 slices whole wheat toast
  • 2 cups baby spinach
  • 1 1/2 cups hulled and sliced strawberries
  • 1 red onion - sliced thinly (will not use all of it)
  • salt and pepper
Directions
Marinate the chicken in Italian dressing for several hours, grill it, and cut it in half length-wise.

Cook the bacon (or heat it in the microwave if precooked.)

Mix avocado, lemon juice and mayo with mixer or in food processor. Season with salt and pepper.

Make the sandwiches with mayo, chicken spinach, strawberries and red onion (I left out the middle slice of bread).
