Reuben Sandwich Casserole 2 Recipe

  • 1 sauerkraut, rinse if preferred and drain (32 ounce jar)
  • 1/2 chopped onion
  • 2 caraway seeds
  • 1 thousand island dressing (16 ounce bottle)
  • 16 shredded or sliced Swiss cheese
  • 1 thinly sliced cooked corn beef or one can of cooked and chopped corn beef
  • 1/2 butter
  • 6 cubed rye bread
Put sauerkraut, onion and caraway seeds into a 13x9 greased or oiled cake pan. Put half of the cheese over this and half of the Thousand Island dressing. Put the corn beef evenly over the dressing. Cover with the rest of the dressing and then put on the rest of the cheese (feel free to use more cheese to your taste). Melt butter and add the cubed rye bread. Put the coated bread cubes on top of casserole. Bake at 375 degrees for 35 minutes. If you use a glass pan bake at 350 degrees.
