Tomato Basil Chicken Recipe

  • 2 chickens, cut into eighths
  • 4 cloves garlic, minced
  • 2 beefsteak tomatoes, diced (large)
  • 3 tablespoons dried basil or 1/2 cup fresh basil
  • 1/2 cup red wine vinegar
  • 1/2 cup olive oil
  • 1/4 teaspoon black pepper
  • 1 teaspoon Salt
  • 5 sundried tomatoes
Preheat oven to 350°F. Place chicken in a single layer in two 9x13 pans. Process remaining ingredients in food processor with S-blade. Pour mixture over chicken and bake uncovered for 1 1/2 hours. Serve with brown rice.
