Ham Paprikash Recipe

  • 2 tablespoons oil or butter
  • 1/4 cup green onions, chopped
  • 1/4 pound mushrooms, sliced
  • 1 3/4 cups cubed ham (or a little less)
  • 1 teaspoon paprika
  • 1/8 teaspoon pepper
  • 3 cups uncooked egg noodles
  • 1 can beef broth (14 ounce can)
  • 1 cup sour cream (can be non-fat)
In a 10" skillet, melt oil or butter. Add green onions and mushrooms, saut 3 minutes. Add ham and seasonings and cook 3 more minutes. Place uncooked noodles on top of mixture. Place uncooked noodles on top of the mixture. Pour broth over all and heat to boiling. Reduce heat, cover and simmer about 15 minutes or until noodles seem soft. Uncover, stir well, and fold in sour cream. Heat. Makes 4 servings.
