Brushetta Chicken Bake Recipe

  • 1 can diced tomatoes, undrained (14 1/2 ounce can)
  • 1 package Stove Top Stuffing Mix (6 ounce pkg)
  • 1/2 cup water
  • 2 cloves garlic, minced
  • 12 pounds boneless skinless chicken breasts, chopped
  • 1 teaspoon dried basil leaves
  • 1 cup shredded part-skim mozzarella cheese
Preheat oven to 400°. Place tomatoes in a medium bowl. Add stuffing mix, water, and garlic, stir just until stuffing mix is moistened. Set aside. Place chicken in 13x9 pan and sprinkle with basil and cheese. Top with stuffing mixture. Bake 30 minutes or until chicken is cooked through.
