Winter Vegetable Chili Recipe

Ingredients
  • 1 1/2 pounds ground chuck
  • 1/4 pound or more Italian sausage
  • 1 onion, chopped
  • 5 cloves garlic, minced
  • 1 cup celery, minced
  • 1 cup baby carrots, cut inch chunks
  • 2 potatoes, cut inch chunks (medium)
  • 1 can stewed tomatoes (14 ounce can)
  • 1 can pizza sauce or tomato sauce (14 ounce can)
  • 1 tablespoon Chili Powder
  • Pinch sugar
  • 1/2 tablespoon seasoned salt
Directions
Cook ground beef and sausage in a casserole. Drain fat, season meat with chili powder and seasoned salt. Remove with slotted spoon, leaving a little fat in the pan. Add onions, garlic and celery. Stir to season and brown lightly. Add potatoes, carrots and tomato products. Mix in cooked meat. Simmer until vegetables are tender-crisp (25-35 minutes). Serve atop salad greens with bowls of grated cheese, chopped scallions, homemade croutons. Serves 6-8. (Leftovers: serve over rice, cheese tortellini or add beans.)
