Vegetarian Muffeletta Sandwich Recipe

Ingredients
  • 2 slices nice wheat bread, toasted
  • 2 tablespoons olive tapenade
  • 1 whole roasted red pepper
  • 2 slices Monterey Jack cheese
Directions
Spread tapenade on the toast, place pepper next, top with jack cheese. Put open face sandwich in the broiler or toaster over. Heat until the cheese is lightly browned and bubbly. Remove from broiler, top with the bread and enjoy.
