Chunky Vegetarian Chili Recipe

Ingredients
  • 1 tablespoon vegetable oil
  • 2 cups Chopped Onion
  • 1/2 cup chopped yellow bell pepper
  • 1/2 cup chopped green bell pepper
  • 3 cloves garlic, minced
  • 1 tablespoon brown sugar
  • 2 1/2 tablespoons chili pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon black pepper
  • 1 teaspoon Old Bay Seasoning
  • 1/2 teaspoon hot pepper flakes
  • 2 cans stewed tomatoes (16 ounce cans)
  • 2 cans black beans (15 ounce cans)
  • 1 can kidney beans (15 ounce can)
  • 1 can pinto beans (15 ounce can)
Directions
Heat the oil in Dutch oven over medium high heat. Add onions, bell peppers, and garlic. Sauté 10 minutes or until tender. Add sugar and spices. Rinse and drain all beans and add to mixture. Bring to a boil. Reduce heat, simmer at least 30 minutes. The longer it simmers, the better the flavor. Add hot sauce, if desired.
