Farfel Vegetable Kugel (Gebroks) Recipe

Ingredients
  • 1 cup minced onions
  • 1 cup finely diced celery
  • 1/2 pound mushrooms, sliced
  • 6 tablespoons oil
  • 3 1/2 cups matza farfel
  • 3 cups hot water with a bouillon cube (or sub fresh chicken broth)
  • 2 Eggs
  • 1 teaspoon Salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon paprika
Directions
Sauté onion, celery, mushrooms in heated oil until tender. Place farfel in a large bowl. Add seasoned hot water and the sautéed vegetables. Mix well. In a small bowl, beat the eggs with the salt, pepper, and paprika. Add to farfel mixture. Blend thoroughly. Pour into greased 8- or 9-inch square baking pan and bake uncovered at 375° for 35-45 minutes until set.
