Irish American Soda Bread Recipe

Ingredients
  • 3 1/4 cups Flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 cup plus 2 T. sugar
  • 1 cup currants
  • 1 teaspoon Caraway Seed
  • 1 egg
  • 1 1/2 cups buttermilk
  • 1/2 cup butter, melted
  • 1 tablespoon coarse sugar for topping
Directions
Mix flour, baking powder, baking soda, salt, sugar, currants and caraway seed. In another bowl mix egg, buttermilk and melted butter. Quickly and gently stir wet ingredients into dry ingredients. Pour into lightly greased soufflé dish or 9X5" loaf pan. Sprinkle with coarse sugar. Bake 375° 50-60 minutes. Test with cake tester.

Makes 1 loaf
