Ingredients
  • 1 onion, chopped
  • 2 stalks celery, diced
  • 2 carrots, sliced
  • 1/2 cup butter or margarine
  • 1/2 cup flour
  • 4 cups turkey or chicken broth
  • 2 cups wild rice, prepared
  • 2 cups light cream
  • 2 cups turkey, cooked, diced
  • 1 teaspoon parsley flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Saute onion, celery, carrots in butter or margarine, until softened.

Reduce heat, stir in flour and cook until bubbly.

Add broth; bring to boil for 1 minute.

Add wild rice, cream, turkey and seasonings. Simmer 20 minutes.

A cream based soup that is the perfect comfort food. Perfect for your leftover turkey. Chicken could also be used in place of the turkey.
