Cheesy Sour Cream Mashed Potatoes Recipe

Try these creamy mashed potatoes with a crisp cheese topping. They are a great side dish served beside a warm roast beef.

Ingredients
  • 8 potatoes, peeled, quartered
  • 1/2 cup butter
  • 1/4 cup milk
  • 1/2 pint sour cream
  • 2 tablespoons onion, grated (optional)
  • salt and pepper, to taste
  • 1 cup shredded Cheddar cheese

Boil potatoes in salted water until done.

Drain potatoes and place back in saucepan. Mash with butter and milk. Add sour cream, onion (if desired), salt and pepper. Spoon into a buttered pyrex baking dish and cover with the grated cheese.

Bake in a 350 degree oven until the cheese is melted and golden brown, about 20 minutes.

NOTE: These potatoes may be made ahead of time, and refrigerated. Heat covered for a few minutes, then uncover and add cheese and bake until golden brown.
