Fresh Herbed Vegetable Rice Recipe

  • 1 can salt free chicken broth
  • 1 cup Uncle Bens brown rice
  • 1 tablespoon salt free margarine
  • 1/2 cup onion, chopped
  • red pepper flakes
  • 1/4 cup dried parsley
  • 1 teaspoon dried basil
  • 1 red or green pepper, cut into julienne (small)
Add enough water to broth to measure 2 1/2 cups. Bring to a boil in medium sauce pan.

Stir in rice, margarine, onion, and red pepper flakes. Cover tightly and simmer 15-20 minutes.

Remove from heat. Let stand covered until all liquid is absorbed, about 5 minutes.

Stir in parsley and basil. Sprinkle with red pepper.
