Zesty Pork Chops and Grilled Vegetables Recipe

It's hard to keep pork chops from drying out but these stay moist and delicious. Paired with the grilled vegetables, it is the perfect meal anytime of year.

Ingredients
  • 4 pork chops, 1/2 inch thick
  • 1/4 cup zesty Italian dressing
  • 1 tablespoon dijon mustard
  • 2 red peppers, chopped
  • 1 zucchini, halved and sliced
  • 1 summer squash, halved and sliced
  • 2 cups cauliflower florets
  • 1 onion, chopped

Preheat grill to medium heat.

Pierce both sides of chops several times with fork. Place in shallow dish.

Combine dressing and mustard. Pour 1/2 dressing mixture over chops; cover dish. Refrigerate at least 15 minutes to marinate. Set remaining dressing mixture aside for basting later.

Remove chops from marinade; discard marinade.

Place vegetables on a foil sheet on the grill and grill chops on each side until desired doneness, approximately 4-5 minutes per side, brushing occasionally with the reserved dressing mixture.

NOTE: Vegetables can be roasted in a 400 degree F oven on a baking sheet instead of grilling, if desired. Just drizzle with a little olive oil before roasting.

"DELICIOUS! The pork was definitely moist but, amazingly, the vegetables were the best part. Due to the snow, I roasted the vegetables in the oven, adding 2 cloves minced garlic and some steak seasoning. And I used a grill pan for the pork chops. Not sure if it can get better even if it was on the grill."
