GRILLED CHICKEN CAESAR SALAD Recipe

Ingredients
  • 1/2 cup classic Caesar dressing, divided
  • 1 pound boneless, skinless chicken breast, cut into bite-size pieces
  • 4 slices Italian bread, thick
  • 1 clove garlic, peeled and cut inch 1/2
  • 1 tablespoon olive oil
  • 6 cups romaine lettuce, torn
  • 3 tablespoons Parmesan cheese, grated
Directions
Pour 2 Tbsp. dressing over chicken in re-sealable plastic bag. Seal bag, turn to coat chicken with dressing. Refrigerate 30 min. to marinate. Meanwhile, heat grill to medium heat. Remove chicken from marinate; discard marinate. Thread chicken onto 4 skewers.

Grill 6-8 min. or until done, turning occasionally. Add bread to grill, cook 1 min. on each side or until toasted on both sides. Rub toast with garlic; brush with oil. Arrange toast and lettuce on platter; drizzle with remaining dressing. Top with chicken skewers and cheese.

Prep Time: 10 min. Total time: 50 min. (including marinating)

Makes: 4 servings
