Banana Chocolate Chip Muffins 16 Recipe

Ingredients
  • 1 1/2 cups sugar
  • 1 cup Margarine
  • 4 eggs
  • 6 ripe crushed bananas
  • 4 cups sifted flour
  • 2 teaspoons Baking Soda
  • 1/2 teaspoon Salt
  • chocolate chips
Directions
In large bowl, combine sugar, margarine, eggs and crushed bananas. Beat with electric beater until light and foamy. Sift together flour, salt and baking soda; add dry ingredients to wet batter. Mix well until blended. Add chocolate chips (about 3/4 of a bag- or add to taste). Bake at 350°F for 30-35 minutes. Bake time varies with ovens. Muffins should be a light golden brown on top when done. Recipe makes roughly two dozen muffins, can be cut in half. (Adding more than 6 bananas will increase moistness of muffins, so do not hesitate to add an extra bad banana).
